Ingredients
- 1 teaspoon extra-virgin olive oil
- 1 pounds ground turkey breast
- 1 cup diced green bell pepper
- 1 tablespoon minced garlic
- 2 teaspoons Italian seasoning

- teaspoon salt
- teaspoon red pepper flakes
- 3 cups marinara sauce
- 2 cups baby spinach leaves
- 4 zucchini, cut into noodle-shaped strands
Directions
Step 1: Heat the olive oil in a large skillet over medium heat. Add the ground turkey, diced green bell pepper, minced garlic, Italian seasoning, black pepper, salt, and red pepper flakes. Cook and stir for 4-5 minutes until the turkey is lightly browned.
Step 2: Stir in the marinara sauce and spinach leaves into the turkey mixture. Continue to cook, stirring occasionally, until the marinara sauce is heated through, about 3 minutes.
Step 3: Add the zucchini noodles into the sauce, using tongs to stir. Cook for an additional 2-3 minutes, until the zucchini is slightly tender, but still has some bite.

I made a few tweaks to the recipe. I opted for a delicious organic marinara sauce and threw in some sauteed onions. I added a bit more red pepper than the recipe suggested and cooked the zoodles separately before mixing them in with the sauce. I sprinkled some Parmesan cheese on top before serving. Absolutely amazing taste and nutrition! Every man at the table adored it and went back for seconds. Taking inspiration from another reviewer, I included some chicken stock and white wine, and cooked the noodles separately on a griddle with olive oil before combining them with the rest of the dish. I also tossed in some fresh basil from my garden. We usually enjoy classic spaghetti and ground beef in Italian cuisine, but this dish was so good that we didn't miss them at all.
