Cheesy Broccoli and Chicken Casserole Recipe

Ingredients

  • 2 heads broccoli, cut into florets
  • 1 large rotisserie chicken, meat pulled and shredded
  • 1 cup mayonnaise
  • 2/3 cup heavy whipping cream
  • 1 tablespoon chicken soup base
  • 1 tablespoon dried dill weed
  • 1 teaspoon ground black pepper
  • 2 cups shredded Cheddar cheese
  • Cooking spray

Directions

  1. Preheat your oven to 350F (175C).
  2. Arrange broccoli florets in a 9x13-inch baking dish.
  3. Layer the shredded chicken evenly on top of the broccoli, pressing gently to compact.
  4. In a medium bowl, whisk together mayonnaise, heavy cream, chicken soup base, dried dill, and black pepper until smooth.
  5. Pour this creamy mixture evenly over the chicken layer.
  6. Sprinkle the shredded Cheddar cheese generously on top.
  7. Lightly grease a sheet of aluminum foil with cooking spray and cover the baking dish with the greased side facing down.
  8. Bake covered for approximately 45 minutes in the preheated oven.
  9. Remove the foil and continue baking until the top is golden brown, about 15 minutes more.
  10. Once baked, let the dish rest for 10-20 minutes before serving to allow flavors to meld and set.

I really like this because it's easy to throw together on a busy weeknight and it's tasty! I great use for leftover chicken too and perfect for my ketogenic lifestyle! I halved the recipe and used a 8x8 dish and it turned out awesome!

Delicious and easy to make. I adjusted it for 2 of us, using 4 skinned thighs that I diced and cooked beforehand. I put 1 head of broccoli florets on the bottom and added the 1/2 cup of mayonnaise, a tsp or 2 of chicken stock, 1 cup freshly shredded sharp cheddar cheese and some pepper that I'd mixed. I cooked it in an 8x8 casserole dish, 30 mins - yum!

I lightly dusted cubed boneless chicken thighs with whole wheat flour & no salt "Kitchen Witch" seasoning, browning first, then sauteed broccoli & matchstick carrots in same pan after removing chicken. Put all together in a baking dish with remaining ingredients, subbing 1/2 swiss & 1/2 colby for cheddar. This is FANTASTIC! The only suggestion would be to use yogurt in place of mayo to reduce fats.

My entire family (ages 11 to 76) really loved this recipe. Kept it ALMOST the same, adding cauliflower florets with the broccoli. I doubled the sauce to make a second smaller vegetarian version (I used cooked sweet potato chunks rather than chicken). For the chicken, I sautéed 3 chicken breasts in olive oil and garlic. I threw on some shredded mozzarella and parmesan along with the cheddar on top. Will definitely make again.

Basic recipe is terrific. The changes I made to accommodate my lactose challenges. I substituted coconut cream for whipping cream and Chobani full fat yogurt for the mayo. I didn't have fresh broccoli, so I used frozen. I had a ton of fresh basil, so added a half cup of fresh and used Parmesean/Romano grated cheese. This recipe is very accommodating.

I used a bag of frozen broccoli, half a rotisserie chicken and less dill than it called for. Approved by teenagers and husband.

This could potentially be great, but it tasted like a mouthful of salt. The chicken soup base I used overpowered the whole thing. I think if I use a teaspon instead of a tablespoon, it might turn out.

I may have cut my broccoli too small, as it was too soft. I will decrease the first bake time from 45-30 min because of that and use a mix of Swiss cheese and cheddar next time. Flavor is wonderful! We all enjoyed it!!

Really good but did change a couple of things. I added a little curry and used frozen broc florets (salted while boiling) and let them dry REALLY well before making it.

Holy mother of God! This is incredible. Bought an Oven Stuffer rotisserie chicken which my local supermarket sells instead of just the smaller 33oz rotisserie chickens it was 55oz. I therefore added proportionally extra heavy cream, mayo, and FRESH organic dill. Yowzers! It melts in your mouth.

Switched out Italian Seasoning blend for dill, added 2 tsp of garlic powder, and a half teaspoon of sea salt. AMAZINGLY easy and so tasty.

This was a great casserole!! I did make a few changes. I used frozen broccoli. Added peas and carrots as well. Used half cup of miracle whip. I also used more whipping cream than was called for. Used half the dill weed as well. I also used better than billion roasted chicken flavor. 2 heaping tablespoons. Lots of minced garlic too. Came out awesome!!! Was asked to make this again!!

Just as described easy and delicious. I’ve made it twice once the full recipe and once cutting in half. The full recipe is way to much for 2 people. We froze half the full recipe, which was just as good when reheated.

Unfortunately, I won't be making this again. Way too much creamy filling, and lacking flavor. I recommend cutting the mayo and cream in half, and adding some dijon mustard to give it more punch. Some family members couldn't eat it. So sorry.

Non faddy Keto would be much better. Keto is life threading and dangerous. Am so astonished and dismayed such recipes are allowed and it is encouraged. Shameful.
