Easy and Delicious Chicken and Rice Casserole Recipe

Ingredients

  • 1 cup uncooked white rice
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cups water
  • 1 (1 ounce) package dry onion soup mix
  • 4 skinless, boneless chicken breast halves

Directions

  1. Preheat your oven to 350F (175C).
  2. Evenly spread the uncooked rice on the bottom of a 9x13 inch baking dish.
  3. Rinse the chicken breasts under cold water, then pat them dry with paper towels. Arrange the chicken breasts on top of the rice in the baking dish.
  4. In a separate bowl, combine the cream of chicken soup with the water. Stir well to mix and pour this mixture evenly over the chicken and rice.
  5. Sprinkle the dry onion soup mix generously over the top.
  6. Cover the baking dish tightly with aluminum foil, ensuring it's sealed well to keep the moisture in.
  7. Bake the dish in the preheated oven for 1 to 1 hours, or until the chicken is cooked through and the rice is tender.
  8. Once done, remove from the oven and let it sit for a few minutes before serving. Enjoy!

I make this recipe all the time with some changes. First, I cut the chicken into bite sized pieces, then in a bowl I combine all the other ingredients and mix well. I pour the mixture over the chicken, cover with foil and bake as directed until the rice is done. It's a simple dish, but if you make it as directed I find that the rice doesn't get cooked and the ingredients don't blend well together. Made the way I do it, it's a flavorful and simple dinner.

I made this but tweaked it a little I combined the rice with the soup then added chicken bouillon, liquid smoke, smoked paprika, salt & pepper, then mixed it well with a whisk, I let it sit for a bit then added chicken tenderloins with salt and pepper, turned out fantastic.

I make this for my family every couple of weeks. It's easy and very flavourful. I use cream of cheddar cheese soup, only half a package of onion soup mix, and chicken broth instead of water. I mix the cheddar soup, chicken broth and onion soup mix, with parsley and half of a chopped onion and set aside. Sprinkle lemon pepper seasoning over the cubed chicken and put that in the pan first, then the rice, then pour the soup mixture over top. Finally I add some frozen corn and peas. Cover tightly with foil and stir halfway through- cooking for 45-60 mins. A delicious easy meal every time!

My wife and I enjoyed this. Real comfort food. I cut the chicken breasts in half. I added diced red pepper and peas for color and flavor. I used a casserole dish with a heavy lid rather than messing with foil. It's easy to prepare which makes it even more attractive. I will make it again.

This turned out really good!! I used half chicken stock and half water instead of 2 cups of just water. Also used shredded chicken pieces I had from a roasted chicken. And finally, I followed another reviewer's suggestion of mixing all of the ingredients first then pouring it over the rice on the bottom of the pan. I cooked mine in a Pampered Chef Deep Dish Covered Baker...it was fantastic. I recommend stirring halfway through the cooking time to help everything mix up and also to prevent the rice from sticking. Definitely recommend for a quick and yummy dinner!

this really is easy to put together. I like to cook my chicken first then shred it and put it in the bottom of the baking dish. Then I combine the rice, soup, with chicken broth instead of water and Knorr Vegetable recipe mix instead of onion soup mix. I pour that over the chicken, cook at 400 degrees until it is nice & bubbly and the rice is cooked through. My family, who are difficult to please, actually like it. I have made it several times and always get a good response from them.

This recipe was as good as it was easy to make. I did change a few things though. Instead of water I used two cups chicken broth and added 1 extra cup of rice as I found it too mushy. I also put seasoned salt and paprika on the chicken to give it extra flavor. I shortened the cooking time to 1 1\4 hour and put fresh broccoli in for the last 15 minutes. Some canned onion rings on top and it was a real winner in our family!

Stovetop method (20 minutes).....I love this recipe but did not have the time to wait 1 - 1 1/2 hrs for it to cook so I tried it on the stove and LOVED it! I cooked the rice as normal. While rice was cooking I cut up 2 (they were BIG) breasts into bite size pieces, heated approx 2 Tblsp oil in pan and cooked chicken till almost done. Sprinkled onion soup mix over chicken and stirred it up. Poured in 1 can of chicken broth (I used this instead of the water) and let cook until chicken was done. Put cream of chicken in, stirred it all up, turned down to low for about 5 minutes, stirring occasionally. Once rice finished cooking, scooped some onto a plate and put chicken "gravy" over top. This will definitely be a recipe we use often!

This was fairly easy to put together. I followed one review and cut up the chicken first. I did use chicken broth too and added some garlic and spices for flavor. Very goo and I will make again.

Awesome and easy. Made half the recipe in a 8x8 dish with some leftover rotisserie chicken. Used one can of cream of mushroom soup, one cup of rice, and one cup of water. I did not use onion soup mix. I added some frozen broccoli and sprinkle or rosemary, thyme, and basil. I mixed everything together before baking for just under 39 min at 350 degrees.

We loved this in our house! Next time, I will dice up the chicken a bit smaller, just for convenience, but it was overall delicious! I mixed all of the ingredients together and let the rice soak in it while I cut up the chicken pieces, then I seasoned the chicken to my liking (garlic pepper, season salt, basil, and rosemary), then poured the mixture over top. Covered with tinfoil and cooked for about an hour and fifteen minutes, just so the rice was tender.

Really good, I added a can of mushroom soup too and an extra cup of rice along with a 1-1/2 cps of peas (same amount of water) SO GOOD!!! Will definitely be making again, and again, and again... this was super easy too! I'm learning how to cook so if I can do it anyone can lol

I followed the recipe but I had split chicken breasts and a convection oven. I checked on the rice after 50 minutes, stirred and took it out at 1 hour. I was glad I did. Rice and chicken might have been over done in another 30 minutes. For those of us on low sodium diets this tasted salty. Checking the ingredient packages for sodium, the onion soup 4080 gr , cream of chicken 2080 gr, & the chicken maybe 400 gr Total 7360 or 1470 gr per serving or 64% of. RDA. People using broth for water are adding a little more sodium. Some may feel the salt adds flavor. If I make it again (if my wife liked it) I will use my own spice mixture in place of onion soup.

I added fresh green beans as I had them on hand and used cream of chicken w herbs b/c of course trying to find. Or all things like cream of chicken soup is ridiculous right now, but it tastes fantastic! And super easy to put together!

I have made this. My family wasn't crazy about this meal. The rice was excellent but the chicken was dried out.
