Easy Chicken Fettuccine with Sun-Dried Tomatoes

Recipe for Cajun Chicken Fettuccine

Ingredients:

  • 4 ounces dry fettuccine pasta
  • 1 pound chicken tenders
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons butter
  • 1 cup heavy whipping cream
  • 3 tablespoons chopped sun-dried tomatoes
  • 2 green onions, white part only, sliced thinly
  • 1 tablespoon freshly grated Parmesan cheese
  • teaspoon salt
  • teaspoon dried basil
  • teaspoon black pepper
  • teaspoon garlic powder

Directions:

Step 1: Fill a large pot with lightly salted water and bring it to a rolling boil. Add fettuccine and cook for about 8 minutes, or until tender yet firm to the bite.

Step 2: While the pasta is cooking, toss the chicken tenders with the Cajun seasoning in a bowl until evenly coated.

Step 3: In a skillet, melt butter over medium-high heat. Add the seasoned chicken tenders and saut for 7 to 8 minutes, or until the chicken is browned and cooked through.

Step 4: Once the chicken is cooked, add the heavy cream, sun-dried tomatoes, green onions, Parmesan cheese, salt, basil, black pepper, and garlic powder to the skillet. Stir and cook for an additional 2 to 3 minutes, until everything is heated through.

Step 5: Drain the fettuccine and plate it. Spoon the Cajun chicken and creamy sauce over the pasta, and serve immediately.
