  • 2 pounds boneless lamb shoulder, cut into 1 inch pieces

  • 2 carrots, peeled and cut into large chunks
  • 1 parsnip, peeled and cut into large chunks (Optional)
  • 4 cups water, or as needed
  • 3 large potatoes, peeled and quartered
  • 1 tablespoon chopped fresh rosemary (Optional)
  • 1 cup coarsely chopped leeks
  • 1 tablespoon chopped fresh parsley for garnish

Directions:

Step 1: Gather all the ingredients. This will ensure you have everything ready before you start cooking.

Step 2: Heat the olive oil in a large stockpot or Dutch oven over medium heat. Once the oil is hot, add the lamb pieces and cook, stirring gently, until evenly browned. Season the lamb with salt and pepper.

Step 3: Add the sliced onion to the pot and cook for a few minutes, until softened.

Step 4: Pour in the water and stir in the carrots and parsnips (if using). Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 45 minutes to 1 hour, or until the lamb is tender.

Step 5: Stir in the potatoes and continue simmering for 15 to 20 minutes. Add the leeks and rosemary, and cook for another 10 minutes, until the potatoes are tender but still whole.

Step 6: Taste the stew and adjust seasoning with additional salt and pepper if needed. Serve the stew piping hot, garnished with freshly chopped parsley for a touch of color and freshness.

How to Store Irish Stew:

Store any leftover stew in an airtight in the refrigerator for up to three days. Reheat in the microwave or on the stove over low heat.
