Easy Chicken Fried Rice Recipe
Fried Rice with Chicken and Sriracha Mayo
This recipe yields 4 servings of flavorful fried rice, packed with a delicious mix of chicken, vegetables, and a spicy kick from the Sriracha mayo.
Ingredients
- 1 tablespoon canola oil
- 1 teaspoon sesame oil
- cup diced carrots
- cup sliced green onions (white and lighter green parts)
- teaspoon garlic powder
- teaspoon ground ginger
- 3 cups cold cooked rice
- 1 teaspoon kosher salt
- teaspoon ground black pepper
- 1 cup shredded cooked chicken
- cup frozen peas
- 2 tablespoons butter
- 2 large eggs, beaten
- 2 tablespoons soy sauce
- 2 teaspoons rice vinegar
- 2 tablespoons Sriracha mayonnaise, or to taste
- 1 tablespoon sliced green onions, or to taste
Directions
Step 1: In a large, nonstick skillet, heat the canola and sesame oils over medium-high heat.
Step 2: Add the diced carrots and cup of sliced green onions to the pan. Cook, stirring constantly, for about 1 minute.
Step 3: Stir in the garlic powder and ground ginger. Cook for an additional 2 minutes to let the flavors blend.
Step 4: Add the cold cooked rice, kosher salt, and ground black pepper to the skillet. Stir occasionally, allowing the rice to brown lightly, which should take about 4-5 minutes.
Step 5: Mix in the shredded cooked chicken and frozen peas. Cook for another 2 minutes until everything is heated through.
Step 6: Push the rice mixture to the sides of the pan, creating a well in the center. Add the butter to the center of the pan and allow it to melt.
Step 7: Once the butter has melted, pour the beaten eggs into the center of the pan. Cook, stirring occasionally, until the eggs are almost set, about 3 minutes.
Step 8: Stir the eggs into the rice mixture, making sure everything is well combined.
Step 9: Add the soy sauce and rice vinegar, and cook for another 2 minutes, stirring occasionally to ensure the sauce is evenly distributed.
Step 10: Serve immediately, topped with a drizzle of Sriracha mayonnaise and a sprinkle of sliced green onions for added flavor and a bit of heat.
Cook's Note
For the best texture, avoid stirring the rice too often when it's in the pan. Allowing it to sit for a while will create crispy, caramelized edges that's the best part! You can swap out the chicken for leftover pork, steak, or shrimp if you prefer.
