Ingredients
- 10 stalks celery, chopped
- 5 carrots, chopped
- 3 onions, chopped
- 2 green bell peppers, diced
- 1 large head cabbage, chopped
- 1 (15 ounce) can cut green beans, drained
- 2 quarts tomato juice
- 2 (16 ounce) cans whole peeled tomatoes, with liquid
- 1 (14 ounce) can beef broth
- Cold water, to cover
- 1 (1 ounce) envelope dry onion soup mix
Directions
- Gather all the ingredients and ensure everything is chopped and ready to go.
- In a large soup pot, combine the celery, carrots, onions, cabbage, bell peppers, and green beans.
- Add the tomato juice, whole peeled tomatoes (with liquid), beef broth, and enough cold water to cover the vegetables.
- Stir in the dry onion soup mix and mix everything together well.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for about 25 minutes or until the vegetables are tender.

This recipe has become a timeless favorite with my family. We've made a few tweaks, like opting for chopped onions instead of onion soup mix and using exclusively organic ingredients.
