One-Pot Spaghetti Recipe

Ingredients

  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (14 ounce) can tomato sauce
  • 1 (14 ounce) can petite diced tomatoes
  • 2 cups water
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 7 ounces whole wheat spaghetti
  • cup grated Parmesan cheese, or to taste (Optional)

Directions

  1. Heat a Dutch oven over medium-high heat. Add the ground beef, chopped onion, and minced garlic. Cook, stirring occasionally, for 5 to 7 minutes, until the beef is browned and crumbled, and the onion becomes translucent. Drain any excess grease from the mixture.
  2. Stir in the tomato sauce, petite diced tomatoes, water, chili powder, dried oregano, and black pepper. Bring the mixture to a boil, then cover the pot, reduce the heat, and let it simmer for about 30 minutes. Stir occasionally during this time to prevent sticking.
  3. Break the spaghetti into thirds and add it to the pot. Stir to combine, then cover and simmer, stirring often, until the pasta is tender. This should take approximately 20 minutes.
  4. Once the pasta is cooked, serve the dish topped with grated Parmesan cheese, if desired.

Review: October 8th, 2022 I followed the sauce recipe to the letter, tasted it, and felt it needed a bit more flavor. I decided to add some basil, fennel seeds, red pepper flakes, and a pinch of salt to suit my personal preferences. A suggestion I have is to be diligent and start checking and stirring the pasta once it's added to the sauce to prevent it from clumping together. If you immediately add the pasta, you're depriving yourself of flavor for the sake of saving time. Cooking the pasta in the sauce greatly enhances its flavor, compared to just pouring sauce over pre-cooked pasta. Taking the time to let the sauce's flavors meld before adding the pasta is definitely worth it.

I absolutely loved the final result of this recipe. I followed it mostly as written, but I decided to include 2 chopped celery stalks and a diced green bell pepper. The instructions were easy to follow and even though I adjusted the cooking time to achieve my preferred pasta texture, the flavor was outstanding and, most importantly, the sauce wasn't watery! By following this method, you'll end up with perfectly saucy pasta with meat that isn't watery in the slightest. Pair it with some crusty bread to soak up every last bit on your plate, and you've got a meal ready to go! I will definitely be making this recipe again!
