Green Beans Almondine Recipe

Cook Time: 15 minutes

Green Beans Almondine is a classic French dish that combines the freshness of green beans with the richness of butter and the crunch of toasted almonds. Its an easy-to-make, elegant side dish that pairs perfectly with just about any main course. Here's how you can make it at home!

Ingredients

  • 1 pound fresh green beans
  • 1 ounces slivered almonds (about 6 tablespoons)
  • 2 tablespoons butter
  • 2 cloves garlic, minced (or more to taste)
  • Salt and pepper to taste

Step-by-Step Directions

Step 1: Start by gathering all the ingredients. Make sure the green beans are fresh, and the almonds are slivered and ready to toast.

Step 2: Place the green beans into a microwave-safe casserole dish. Add just enough water to cover the bottom of the dish. Microwave the beans on high for 8 to 10 minutes, or until they are almost tender.

Step 3: Once the beans are done, drain them in a colander. Quickly rinse the beans under cold water to stop the cooking process and preserve their bright green color.

Step 4: While the beans are cooling, heat a frying pan over medium heat. Add the slivered almonds and cook, stirring frequently, until they begin to turn golden, about 3 to 5 minutes. Keep a close eye on them to prevent burning.

Step 5: Once the almonds are toasted, remove the pan from the heat and add the butter. Stir until the butter has melted completely.

Step 6: Return the pan to the heat, then add the minced garlic and saut for about 30 seconds until fragrant.

Step 7: Add the prepared green beans to the pan. Season with salt and pepper to taste. Continue stirring for 3 to 5 minutes, until the beans are heated through and coated with the buttery almond mixture.

Step 8: Once everything is well mixed and heated, remove from the heat and serve immediately. Enjoy your delicious green beans almondine!

A quick way to prepare a delicious side dish! For my tastes, 8-10 minutes in the microwave is way overcooked. If you like your green beans with a bit of snap to them, I highly recommend cooking only half the stated time. I found them perfectly done at 4 minutes. I also didn't find they needed 5 minutes in the pan as they were still warm when I added them; 2 minutes to toss and coat everything evenly was plenty. I loved the flavor of the garlic and toasted almonds. A great combo that I will make again!

This is easy, fresh, and delicious! I use the skinny French green beans (haricots verts) and boil them for 5 minutes and shock them in cold water.

I liked cooking the green beans in the microwave. The degree of doneness was nearly perfect, possibly because I used really young green beans. I did 8 minutes, and I think next time I'll go for 7 minutes. I used sliced almonds, because that is what I had, on hand. The fresh minced garlic added a lot, too! Thanks for the recipe!

This was always my favorite way to eat green beans. For decades they were sold in the freezer section using french cut green beans and had that little packet of almonds that you sprinkled on after they cooked. I haven't been able to find those green beans at the store for years. Now I can make my own, and these are so much better! I used frozen green beans and it was only a 12 oz. bag. I microwaved them with a little water and a sprinkle of salt for 8 minutes and they were perfectly done for us. I did scale back on the almonds since I only had 12 oz. of green beans, but left the garlic at 2 cloves. I used a garlic press instead of hand mincing the garlic cloves. The garlic gives them a nice flavor and keeps them from being boring, and then you get toasted nutty crunch from the almonds. This is a fantastic recipe, and much better than the frozen product I can't find anyway. I'm sure this is even better with fresh green beans. This is fancy enough for company, but fast and easy enough for an every day dinner too.

Love this recipe! My mom used to make this dish and added a squeeze of fresh lemon. I do too. I also used canned french cut green beans. Still got rave reviews from the family.

Cooked beans as directed in a 1,000 watt microwave. Way over cooked. 4-5 minunes would be sufficient depending on how you like the beans cooked. Flavorful and easy to prepare.

I know I could make the beans cook a little longer but that’s my taste I’m not a fan of Al dente. eEeryone else really like it. Didn’t change or add anything stuck to the recipe. But I will try it again and julienne the beans. Thank you for the recipe.

As an added kick of flavor-top with French fried onions for a garnishment, and add some finely crumbled very hard Parmesan to the final turn of the spatula. That’s how I make mine every year for Christmas

Good directions and easy to make. Even the non-vegetable eating kid had seconds.

This turned out perfectly! My husband said it needed more almond, but I think they just fell to the bottom of the dish as I was stirring them.

We love fresh green beans and I was very excited to make this. I made it exactly as directed, but it just didn't have much flavor. I'm not sure why as I used fresh garlic and real butter.
