Best Fried Walleye Recipe
This delicious recipe is simple to prepare and perfect for a family dinner. It features crispy walleye fish fillets coated in a crunchy cracker crust, fried to golden perfection and served with lemon wedges for added freshness.
Ingredients (4 servings)
- 4 walleye fish fillets
- cup all-purpose flour
- teaspoon garlic powder
- teaspoon ground black pepper
- 1 pinch salt (Optional)
- 2 large eggs, beaten
- 2 cups finely crushed saltine crackers
- Vegetable oil for frying
- 1 lemon, cut into wedges
Directions
- Gather all the ingredients and make sure the walleye fillets are free from bones and skin. If necessary, cut the fillets into manageable pieces.
- In a shallow bowl, combine the flour, garlic powder, ground black pepper, and salt (if using).
- In a separate shallow bowl, place the beaten eggs.
- Spread the crushed saltine crackers evenly on a plate.
- Heat vegetable oil in a deep fryer or large cast iron skillet to 375F (190C).
- Dip each fish fillet into the flour mixture, then into the beaten egg, and finally coat it evenly with the crushed cracker crumbs. Place the coated fillets on a plate.
- Using tongs, carefully lower two fillets into the hot oil. Fry until golden brown, about 3 minutes per side.
- Transfer the cooked fillets to a paper towel-lined plate to drain excess oil. Repeat the process with the remaining fillets.
- Serve the crispy walleye fillets with lemon wedges on the side for a refreshing finish.
Recipe Tip
To crush the saltine crackers, place them in a large resealable plastic bag and roll over them with a rolling pin until you achieve a fine, breadcrumb-like consistency.

This is the traditional way of preparing walleye along with northern pike found in the fresh water lakes in northern Minnesota. My Grandma used to prepare it this way and it truly is the best fried fish!

This is more or less "exactly" how its supposed to be done! It can be difficult (at best!) to get it all down on a single piece of paper....my notes would be to let the coatings set for a bit, that they adhere that much better....and I would be using lard, as opposed oil, but that's just me, but everything else in this recipe is fully correct!

My husband went fishing last weekend and caught one walleye and three bass. In the past, my parents did most of the cleaning and cooking when we caught fresh fish. For the first time we were on our own and we were excited to learn. I started searching for recipes and I stumbled across this one. It was fairly simple to make and the coating stuck great. Why did I only give it three stars then? Not enough salt in our opinion. Next time we will add more salt and probably add a fish seasoning. I wish I could give it more stars but it really lacked the flavor that I was hoping for. If you love salt, I would recommend adding a lot more. I used a 1/2 teaspoon and you couldn't even taste that.

OMG! I cook a lot and there are hits and misses! I love chicken and beef and pasta etc but FISH??? No way ! Friends gave us 4.5 lbs of walleye they. Caught and we were verklempt. Anyway. We tried 2 recipes. The other one included bread crumbs , Parmesan and baking. Fair but icky medium quality baked restaurant fish! THIS recipe however rocked the house and made excellent fish sandwiches the next day! I swear I am having a fried clam, oyster, high quality fish day soon- with this favorite childhood SALTINE recipe! Let's figure out how to add bacon and crusty bread! Cheers!

I make this recipe every year when we get walleye. It is the best recipe ever. I have now switched to air frying it in my ninja foodi and I use jalapeño kettle chips instead of crackers. OUT OF THIS WORLD!! Tonight I used cheddar Cheetos, spicy jalapeño chips and jalapeños kettle chips. Delicious!

This was so very good. The walleye was fresh caught my neighbor and was less than a day old. I varied this recipe two ways. First, I used Panko bread crumbs instead of the saltine crackers, and second, I added about an 1/8 tsp of Jamaica Jerk seasoning to the Panko bread crumbs. The fish was so delicious, and crunchy that neither me or my husband wanted to finish it: we wanted to savor every bite and wished we had an endless supply. We have prepared a lot of walleye since our neighbor is an avid fisherman, and this was by far the best recipe we've used.

Another Minnesotan! So I am celiac and really miss fried walleye. I subbed GF Schar crackers for the gluten crackers, 1-+1 GF flour and I am extremely happy with this recipie! Light and crispy. YUM Best one I've found. Thanks for sharing.

Make sure you have 375 degree grease, dont overcook, soon as it floats it's done. I used panko instead of saltines and added extra salt, some garlic salt, pepper, harissa and season salt) it cooked rapidly in bout 1.5 inches of canola oil. excellent and very crunchy!

Per suggestion of another reviewer, I combined flour mixture and cracker crumbs. Dipped fish in egg and then covered with flour/cracker mixture. Otherwise followed recipe exactly. Amazingly delicate and delicious.

I used Roundy's Italian panko breadcrumbs instead of cracker crumbs. I doubled up on the garlic powder, 'cause that's the kind of guy I am. It came out great! This is now my go-to recipe for fried fish.

I was making this before I saw this recipe only I fry in a small amount of butter and sometimes add a little oil to make it crispier.

I pan fried the fish and it was excellent. I followed this recipe to the letter and as the description says, "No Tarter Sauce needed". That has always been my standard for Walleye, if it does not need Tarter Sauce it is a great fish dinner. Some of that will go to the quality and freshness of the fish but this recipe compliments it perfectly with an excellent coating. It is a keeper and I will do it again.

Excellent! I am a bit more of a seasoning person and added garlic salt and onion powder along with some some Hungarian paprika. It turned out perfect. I wish I knew how to post a picture from my cell phone as it's a perfect picture of perfect fried fish.

Well this was my first time trying walleye and I had heard it was really good and was not disappointed. I made this recipe using club crackers instead of saltines and lard instead of oil. Hands down it was the best fried fish I've ever had and one of the best fish period. The wife and I are not even big fish eaters but we couldn't stop eating this fried walleye until we were stuffed to the gills! I'm saving this recipe and making any fried fish I ever make again this way!
