Campfire Chicken Foil Packets
Ingredients:
- 1 pound skinless, boneless chicken breast meat, cubed
- 2 onions, diced
- 1 (8 ounce) package sliced fresh mushrooms
- 1 yellow bell pepper, seeded and sliced into strips
- 1 red bell pepper, seeded and sliced into strips
- 4 cloves garlic, sliced
- 4 small potatoes, cubed
- cup olive oil
- 1 lemon, juiced
Directions:
Step 1: Prepare all ingredients. Ensure the chicken is cut into small cubes, the vegetables are diced, and the garlic is sliced.
Step 2: Build a campfire and let it burn down until there is a bed of coals. Rake the coals into a flat layer on one side of the fire for even cooking.
Step 3: In a large bowl or resealable plastic bag, combine the cubed chicken, diced onions, sliced mushrooms, bell peppers, garlic, and potatoes.
Step 4: Pour the olive oil and lemon juice over the mixture, and toss everything together to ensure it is evenly coated.
Step 5: Divide the mixture evenly into 4 large sheets of aluminum foil. Top each portion with another sheet of foil. Roll up the edges tightly to seal the packets.
Step 6: Double-wrap each packet with another sheet of aluminum foil to ensure the ingredients stay sealed during cooking.
Step 7: Place the foil packets over the preheated coals and cook for about 40 minutes, or until the chicken is no longer pink and the juices run clear. An instant-read thermometer should read at least 165F (74C) when inserted into the center of the chicken.

The cooking time seems accurate when grilling over hot coals. It is essential to remember to flip it over halfway through cooking. Unfortunately, most of the bottom layer of my meal, approximately 75%, was burnt and not edible at all. If I had flipped it, the outcome would have been perfect.
