Pressure Cooker Red Beans and Sausage Recipe

Cook Time: 30 minutes

Ingredients

  • 1 pound dried red beans, rinsed
  • 1 (1 pound) package smoked sausage, sliced
  • 1 bay leaf
  • 2 tablespoons Cajun seasoning, or to taste
  • clove garlic, chopped
  • onion, chopped
  • 1 stalk celery, chopped
  • green bell pepper, chopped
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • teaspoon ground cumin
  • 5 cups cold water, or as needed

Directions

  1. Combine the red beans, smoked sausage, bay leaf, Cajun seasoning, garlic, onion, celery, green bell pepper, salt, parsley, and cumin in the pressure cooker.
  2. Pour in enough cold water to cover the ingredients, following the manufacturer's instructions (be careful not to exceed the recommended water level inside the pot).
  3. Stir everything together to ensure an even mix of ingredients.
  4. Seal the pressure cooker lid and bring it to full pressure over high heat.
  5. Once the cooker reaches full pressure, reduce the heat to low and maintain the pressure. Cook for 30 minutes.
  6. After cooking, allow the pressure to drop naturally before opening the lid.
  7. Stir the contents, and your dish is ready to serve.

Cook's Note

I personally enjoy using Conecuh hickory smoked sausage from Alabama for added flavor.

Cajun seasoning can vary in both heat and saltiness, so be sure to adjust the amount according to your personal taste. If you'd like, you can even create your own Cajun spice mix using a specific recipe.

Thank you for providing an excellent base recipe! I must admit that I have never been able to make Red Beans from scratch that I truly enjoyed, until I tried this one. I did make a few adjustments to suit my preferences: I included 2 cloves of garlic, added 1/2 pound of ham chunks which I cooked with the beans (saving the sausage for later), 1 tablespoon of Worcestershire sauce, 1 teaspoon of thyme, 1 chicken bouillon cube, 1 teaspoon of Tabasco Chipotle sauce, and an extra bay leaf. I soaked the beans for about 4 hours, then cooked them in a pressure cooker for 50 minutes followed by an additional 10 minutes after adding 1/2 pound of sausage. The result was incredibly delicious - the best Red Beans I have ever tasted, and I live in South Louisiana!

I have tried this recipe multiple times, and it always turns out exceptionally well. The flavor and richness are outstanding. I made two slight modifications: first, I sauté a pound of chopped bacon before adding the other ingredients. Second, I wait to add the sausage until the final 20 minutes of pressure cooking.

I originally printed this recipe in March 2018, and it has been a staple in my kitchen ever since. The only adjustment I made was using less Cajun seasoning since I prefer a milder flavor. Other than that, everything else remains the same, and it has become a family favorite. Thank you!

This was fantastic! I added extra vegetables and only used 1/4 tsp of Cajun seasoning. Served over rice.

This dish went above and beyond my expectations! I always follow the recipe to the letter. Just like in any science experiment, it's important to have a control. Next time, I might include shrimp and chicken, along with some extra onions. Overall, a fantastic recipe for sure.

Review: I used Roger Wood spicy hot smoked sausage to make a delicious meal. I paired it with 2lbs of red beans, added 1/2 tsp of red pepper, and 1/2 tbs of smoked paprika. The combination was absolutely fantastic and packed a flavorful punch. Highly recommended for a satisfying and spicy dish!
