Crispy Baby Potatoes Recipe

Steamed and Pan-Fried Baby Potatoes

Original recipe (1X) yields 4 servings

Ingredients:

  • 1 pounds baby potatoes, halved
  • teaspoon dried parsley
  • teaspoon garlic powder
  • Salt and ground black pepper, to taste
  • 1 tablespoon olive oil (or more as needed)

Directions:

Step 1: Place a steamer insert into a saucepan and add enough water to reach the bottom of the steamer. Bring the water to a boil.

Step 2: Add the halved baby potatoes to the steamer, cover, and steam until fork-tender, about 10 minutes.

Step 3: Transfer the steamed potatoes to a bowl. Add the dried parsley, garlic powder, salt, and pepper. Toss the potatoes to coat evenly with the seasonings.

Step 4: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the potatoes to the skillet.

Step 5: Cook the potatoes in the hot oil, shaking the skillet occasionally to ensure they cook evenly. Continue cooking until the potatoes are golden brown and crisp on all sides, about 10 minutes.

This recipe is fantastic! It's super easy to make and incredibly healthy (without sacrificing flavor!). This will definitely be my new favorite recipe. Just be cautious of MY mistakes - make sure to use small enough potatoes, opting for baby-sized ones to ensure they cook perfectly within the recommended time. Also, be sure to use medium-high heat on your stove to prevent burning (or worse, lack of crunch). I found that mixing my spices together before evenly sprinkling them over the potatoes worked really well to balance out the flavors. On my second attempt, I added a bit more oil and some Cajun seasoning to suit my personal taste preferences. However, the base recipe is truly perfect.

Great experience!! I didn't have parsley, so I added some Parmesan cheese instead when I cooked them.
