Giblet Gravy Recipe

Cook Time: 45 minutes

This giblet gravy recipe is a perfect way to reduce food waste during the holiday season. Giblets are the edible organs of fowl, such as chicken and turkey. These organs include the gizzard, the heart, the kidneys, the neck, and the liver. For this recipe, you'll typically use the giblets leftover from a whole turkey, though they can often be purchased at your local grocery store or butcher.

Ingredients

  • 1 quart water
  • Giblets from a turkey (gizzard, heart, kidneys, neck, liver)
  • medium yellow onion
  • 1 stalk celery, cut in half
  • 1 cube chicken bouillon
  • teaspoon salt
  • teaspoon ground black pepper
  • 2 (14.5 ounce) cans chicken broth
  • 4 large hard-cooked eggs, chopped
  • cup milk
  • 2 tablespoons cornstarch

Directions

Follow these steps to make this flavorful giblet gravy:

  1. Make stock: In a 2-quart saucepan, combine water, giblets, onion, celery, bouillon, salt, and pepper. Simmer the mixture over medium heat for 40 to 50 minutes. Once done, remove the liver and neck from the saucepan and transfer them to a cutting board. Chop the meat and set it aside. Discard the vegetables and any remaining giblets, including the neck muscle.
  2. Prepare the gravy: Return the chopped liver and neck meat to the saucepan. Add the chicken broth and chopped eggs. Stir to combine, and bring the mixture to a gentle simmer over medium heat.
  3. Thicken the gravy: In a small bowl, mix together the milk and cornstarch until smooth. Slowly whisk this mixture into the simmering gravy, stirring constantly. Reduce the heat to low and continue cooking for another 3 to 5 minutes, or until the gravy reaches the desired thickness.
  4. Serve: Once the gravy has thickened, remove it from the heat. Serve hot over your favorite dishes and enjoy!

Storage & Freezing Tips

Store leftover giblet gravy in an airtight in the fridge for up to three days. Reheat on the stove or in the microwave. If you want to freeze it, portion the gravy into smaller s. Freezing will change the texture slightly, so it's best to freeze in individual servings. Freeze for up to 3 months and thaw in the fridge overnight before reheating.
