Roasted Baby Potatoes Recipe
This simple and delicious recipe features golden baby potatoes roasted to perfection, with fragrant garlic and rosemary. Crispy on the outside and tender on the inside, these potatoes are the perfect side dish for any meal.
Ingredients
- 1 pounds unpeeled golden baby potatoes, rinsed and dried thoroughly
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chopped fresh rosemary (or to taste)
- Sea salt and freshly ground black pepper, to taste
Directions
Step 1: Gather all ingredients and preheat your oven to 400F (200C).
Step 2: In a large bowl, combine the potatoes, olive oil, minced garlic, chopped rosemary, sea salt, and freshly ground black pepper. Toss the mixture until the potatoes are evenly coated and the garlic is distributed throughout.
Step 3: Transfer the seasoned potatoes onto a rimmed baking sheet, spreading them out in a single layer.
Step 4: Place the baking sheet on the bottom rack of the preheated oven. Bake for about 20 minutes, shaking the pan every 5 minutes to ensure the potatoes do not burn. The potatoes are ready when the outside is crispy and the insides are fork-tender.

Another way to avoid burning garlic at 400 degrees is to add directly to the potatoeswhen they come of the oven. The residual heat will cook the garlic.

I lowered the temp (garlic should not be roasted above 375F in order to prevent burning.) I also increased the cook time to 30 min. My potatoes were about 1-1.5". I did not open the oven every 5 min to shake. I was cooking a pork loin at the same time and was not willing to lose that much heat so often. I used a gallon size Ziploc for easy clean up instead of a bowl. The structure was there I just had to tweak the technique.

It is super easy recipe, but you can also make variations with the seasoning to add to the flavor. I pretty much followed the original recipe and used Himalayan salt, mixture of black, red and white pepper, garlic powder and dry rosemary. The roasted potatoes were tender and super tasty :)

Easy quick prep and roast. I foil lined the baking sheet, and set the oven to 375F to minimize any burning. Bake time 30 minutes was perfect. Seasoning was per recipe, but used garlic salt and chopped garlic mixed in ev olive oil with homegrown dried rosemary and black pepper to baste the potato skins before placing in the preheated oven. Served as side dish to German weisswurst and sauteed cabbage.

This was a really yummy way to fix the baby potatoes. I cut them in half and cooked them in the air fryer. It was a hit with the family. Delicious and tasty!

Meh...potatoes didn't get as crisp as I like and the rosemary flavor was non-existant, probably because using fresh rosemary on a metal sheet for 20 minutes in an oven just burns the rosemary, and leaves the garlic pretty close to burning. Probably needs longer cooking time at a lower temp.

The potatoes ended up tasting very good, but even halved they took a good 30 minutes to cook at 400 degrees. They were about 1.5 to 2 inches in diameter before I cut them. I used garlic olive oil, mixed with regular extra virgin olive oil, and fresh rosemary right from the garden, great combination of flavors. I would definitely make these again. Very easy.
