Balsamic Goat Cheese Stuffed Chicken Breasts Recipe
Ingredients
- 1 teaspoon olive oil
- 1 shallot, finely diced
- 1 cup balsamic vinegar
- 2 skinless, boneless chicken breast halves
- 2 ounces goat cheese, divided
Directions
Step 1: Preheat the oven to 350F (175C).
Step 2: In a skillet, heat the olive oil over medium heat. Add the shallots and cook, stirring occasionally, until translucent, about 5 minutes.
Step 3: Pour in the balsamic vinegar and bring it to a boil. Once boiling, reduce the heat to low and let it simmer for 10 minutes, stirring often, until the mixture has reduced by half.
Step 4: Meanwhile, prepare the chicken breasts. Slice each breast horizontally from one side, leaving about half an inch at the other side, creating a pocket that can be opened like a book.
Step 5: Spread half of the goat cheese onto one half of each chicken breast. Drizzle about a third of the balsamic reduction over the cheese.
Step 6: Close the chicken breasts and secure the edges with toothpicks to hold the filling in place. Arrange the stuffed chicken breasts in a baking dish.
Step 7: Drizzle the remaining balsamic reduction over the chicken.
Step 8: Bake in the preheated oven for 30 to 35 minutes, or until the chicken is fully cooked, the filling is hot, and the juices run clear. The internal temperature should reach at least 160F (70C) when measured with an instant-read thermometer.
Recipe Tip: You can add sauted mushrooms to the filling for extra flavor.

Wow...this dish was absolutely amazing! The only modification I made was adding sun-dried tomatoes on top of the goat cheese before sealing the chicken breast. I believe that by incorporating mushrooms, it could easily mimic Carrabba's stuffed chicken breast.

This dish was fantastic and simple to make, and it was a hit with all of my children! Following the recommendation, I sprinkled sun-dried tomatoes over the goat cheese and sweetened the balsamic reduction with honey, cooking it until it became thick and syrupy. This recipe will definitely become a regular in our household, and if my kids ever grow tired of it, I'll experiment by swapping the sun-dried tomatoes with sautéed mushrooms, another suggestion that caught my eye.

I followed a reader's advice by incorporating oil-packed sun-dried tomatoes and goat cheese, along with sauteed mushrooms, into this dish. Seasoning the chicken generously with salt, pepper, and garlic powder, I cooked it without needing toothpicks to hold the cheese in place.
