Simple Shepherd's Pie

Original recipe (1X) yields 4 servings

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can Campbell's Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
  • 1 tablespoon ketchup
  • 1 teaspoon ground black pepper
  • 1 cup frozen peas and carrots
  • 1 cup milk
  • 2 tablespoons butter
  • 1 cups instant mashed potato flakes or buds

Directions

  1. In a 10-inch skillet, cook the ground beef and chopped onion over medium-high heat, stirring frequently to break up the meat. Cook until the beef is well browned. Drain off any excess fat.
  2. Stir in the can of soup, ketchup, black pepper, and frozen peas and carrots. Mix everything together well.
  3. Transfer the beef mixture into a 9-inch pie plate, spreading it out evenly.
  4. In a 2-quart saucepan, heat the milk and butter over medium-high heat until it reaches a boil. Once it boils, remove from the heat.
  5. Slowly stir in the instant mashed potatoes until fully combined, creating a smooth mixture.
  6. Spoon the mashed potato mixture over the beef mixture in the pie plate, spreading it out evenly.
  7. Place the pie plate in the oven and bake at 400F for 15 minutes, or until the mashed potatoes are lightly browned on top.

I couldn't give this recipe a perfect 5 stars only because I made a variation by not using canned soup. I opted to use a cast iron skillet instead: I started by browning 3 tablespoons of butter with half a chopped yellow onion. Then I added 4 tablespoons of basil pesto and browned it for about a minute. After that, I added 1/3 cup of flour and browned it for around 5 minutes. I then poured in 1 cup of milk, stirring continuously until it was well mixed. I repeated this process with 2 more cups of milk, one cup at a time. Next, I added the vegetables and meat (I used chicken), cooked it a bit, and topped it with mashed potatoes. I transferred the skillet to a preheated 400-degree oven and baked it for 20 minutes. The result was absolutely delicious!

I tried out this recipe and absolutely loved it! It was incredibly quick and simple, making it the perfect meal for busy families. After my first attempt, I decided to experiment a bit with the recipe. I ended up creating a version that I adore and that requires even less time. Instead of using 2 cups of potatoes, I used 8 oz of instant garlic mashed potatoes. I also prepared them with 2 cups of milk instead of following the package instructions. I swapped out peas and carrots for a bag of frozen green beans, adding them in after mixing everything else together. Once I transferred everything to a 2 qt casserole dish, I topped it with a cup of cheddar cheese before spreading the garlic mashed potatoes on top.

I tried out the base recipe with a few of my own additions - garlic salt, Lowery seasoning salt, and Worcestershire sauce in the beef. I also threw in a cup of carrots, peas, and corn. For the potatoes, I went with Bob Evans microwave potatoes, and they turned out great. The end result was a fantastic meal!

Next time, I plan to increase the amount of potatoes to fully cover the top of the dish and bake it in my cast iron skillet. I found the additional tips from another reviewer on enhancing the flavors very helpful, so I decided to add Worcestershire sauce and Dijon to the usual ingredients.

The original recipe was lacking in flavor and ended up quite bland. I made significant modifications to enhance it. I added chopped garlic, garlic powder, parsley, seasoning salt, and 3/4 jar of brown gravy to the meat mixture. For the mashed potatoes, I used 1 1/2 cups of milk, chives, salt, and pepper to give it more taste. It was clear that the original recipe lacked seasoning. Overall, the original recipe was not satisfying and required adjustments to make it enjoyable. Fortunately, my modified version turned out fantastic and was a hit with my guests!

Excellent recipe! It was simple and fast to make, and everyone in my family enjoyed it. I added a layer of shredded sharp cheddar on top before putting it in the oven, which added a delicious touch.
