Chef John's Chicken and Mushrooms Recipe

Chicken with Mushroom Sauce

Servings: 2

Ingredients:

  • 2 chicken breast halves, boneless, skin-on
  • Salt and ground black pepper, to taste
  • 2 tablespoons olive oil
  • 8 ounces fresh mushrooms, sliced 1/4 inch thick
  • 1 pinch salt
  • 1/2 cup water
  • 1 tablespoon butter

Directions:

  1. Preheat the oven to 400F (200C).
  2. Season both sides of the chicken breasts with salt and ground black pepper.
  3. Heat olive oil over medium-high heat in an ovenproof skillet. Once hot, place the chicken in the skillet, skin-side down, and cook until browned, about 5 minutes.
  4. Flip the chicken over. Stir in the mushrooms and add a pinch of salt. Increase the heat to high and cook the mushrooms, stirring occasionally, until they shrink slightly, about 5 minutes.
  5. Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the chicken is no longer pink in the center and juices run clear. An instant-read thermometer should read 165F (74C) when inserted into the center.
  6. Remove the chicken from the skillet and place on a plate. Cover loosely with foil and set aside.
  7. Return the skillet to the stovetop over medium-high heat. Cook and stir the mushrooms until brown bits form at the bottom of the pan, about 5 minutes.
  8. Pour water into the skillet and bring to a boil, scraping up the browned bits from the bottom of the pan. Let the water cook down by half, about 2 minutes.
  9. Remove from heat and stir in any accumulated juices from the chicken. Add butter to the skillet, stirring until fully melted and incorporated.
  10. Season the mushroom sauce with salt and pepper to taste. Spoon the sauce over the chicken breasts and serve immediately.

I broke one of my long-standing rules by making a few modifications (based on reviews) before trying this recipe for the first time. Shame on me, but the end result was fantastic! It provided a great canvas for a delicious and simple meal. I used 1/4 cup each of broth and white wine instead of water, added a sprinkle of Hungarian paprika, a tablespoon of chopped onion, and a small clove of garlic. My family, particularly my husband, are not big fans of traditional American beef stroganoff. However, this dish was a hit for me and was enjoyed by every member of my family. We used boneless, skinless chicken and it turned out delicious. Utilizing our Meater thermometer, which I inserted before placing the cast iron pan in the oven, ensured that the chicken was incredibly juicy and perfectly cooked. To cater to my kids' preferences, I chopped the mushrooms into small pieces, as they only enjoy them in tiny form. We served the dish over egg noodles. I highly recommend trying out this recipe!

I tried making this recipe as instructed, using two chicken breasts. However, I regret putting it in the oven as 5 minutes on each side was too long. A few extra minutes on the stove would have been sufficient to cook the chicken fully. Unfortunately, baking it at 400 degrees resulted in dry chicken. I won't be attempting this recipe again. Apologies!

Great dish! I prepared fettuccine while the chicken was roasting in the oven. Once the chicken was ready, I added heavy cream to the pan along with mushrooms and cooked everything until well blended. Then I combined the fettuccine with the creamy sauce, plated it up, and added the chicken on top of each serving. The recipe was good, but I was looking for a more exciting twist.
