Grilled Italian Sausages with Roasted Vegetables
This delicious grilled dish combines the savory flavors of Italian sausage with fresh, roasted bell peppers and onions. Perfect for a summer BBQ or a quick weeknight meal, this recipe is easy to make and packed with flavor.
Ingredients (Serves 5)
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 small white onion, sliced into petals
- 1 small red onion, sliced into petals
- 1 tablespoon olive oil
- teaspoon dried Italian seasoning
- 1 pinch salt and ground black pepper to taste
- 5 (4 ounce) hot Italian sausage links
Directions
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- In a large bowl, combine the red, green, and yellow bell peppers along with the white and red onion petals.
- Drizzle olive oil over the vegetables, then add Italian seasoning, salt, and pepper. Toss well to ensure the vegetables are evenly coated.
- Use a toothpick to poke 4 small holes in each sausage link to prevent them from bursting while grilling.
- Place the seasoned vegetables in a grill basket and set it on the preheated grill. Grill the vegetables for about 2 minutes.
- Place the sausages directly on the grill grate. Grill for 4 minutes, then flip the sausages and stir the vegetables to ensure even cooking.
- Continue grilling the sausages for another 4 minutes, flipping them again if necessary, until fully cooked and browned.
- Once cooked, remove the sausages and vegetables from the grill. Serve immediately.
Cooks Note
If you prefer, you can serve the grilled sausages in hot dog buns with the grilled vegetables finely chopped as a "relish." A squirt of mustard adds a nice touch for extra flavor.
