Easy One-Pan Taco Skillet Recipe

  • 1 pound extra lean ground beef
  • 1 (8.8 ounce) pouch UNCLE BEN'S Ready Rice Long Grain & Wild
  • cup water
  • 1 (1.25 ounce) package taco seasoning mix
  • cup frozen whole kernel corn, thawed
  • 1 cup shredded white Cheddar cheese
  • 2 green onions, sliced (optional)
  • 1 (12 ounce) bag tortilla chips

Directions

Step 1: Place a large nonstick skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until it is fully browned, about 8 minutes. Drain excess liquid from the pan.
Step 2: Pour in the water and sprinkle in the taco seasoning. Stir to combine thoroughly with the beef.
Step 3: Cook the rice according to the package directions. Once cooked, fold the rice into the beef mixture, then stir in the thawed corn.
Step 4: Increase the heat and bring the mixture to a gentle boil. Reduce heat and simmer until the liquid is absorbed, about 7 minutes, stirring constantly to prevent sticking.
Step 5: Remove the skillet from heat. Sprinkle the shredded cheese over the mixture and stir until melted and evenly combined.
Step 6: Garnish with sliced green onions if desired. Serve warm with tortilla chips on the side.
Cook's Tip: Ground turkey can be used as a substitute for ground beef for a lighter variation.

I absolutely love the flexibility of this recipe. It allowed me to enjoy a "Dip" style meal using chips as the perfect vehicle, while Mr. LTH opted for a heartier option by filling soft taco shells. I made a few changes, starting with using Uncle Ben's Ready Rice Pinto Beans and Rice for a more Tex-Mex flavor. Despite my microwave being out of order, I simply added the rice as-is and it worked out fine. I dislike using part of a packaged item, so I used a whole bag of frozen corn. Lacking green onions, I substituted half a sweet onion and added it along with the cheese, which added a delicious flavor. I served mine in a nacho style with shredded lettuce, tomatoes, sour cream, and jalapeños, accompanied by tortilla chips. This recipe yields a generous portion, making it perfect for a family meal (I even froze the leftovers for easy camping tacos - yes, we "camp" with a microwave!). Thanks for the great recipe!

This recipe is fantastic as a base! I included onions and garlic with the meat, and finished it off with diced avocado and sour cream. Following suggestions from others, adding a can of Ro-Tel would definitely enhance the dish.

Rating: Four stars. One person at the table suggested it would work better as a burrito filling. The recipe was simple, but everything ended up a dark brown color - next time, I might mix the rice with the cheese to maintain a brighter appearance. Leftover reheating isn't ideal as the cheese makes it greasy. I plan to make this again with some modifications.

Delicious and simple. Both my 7-year-old sons and husband enjoyed it. I substituted brown rice and cheddar cheese. Skipped the green onions due to unavailability. Will definitely make it again!
