Lazy Perogies Recipe
Ingredients
This recipe was created for its original yield. Adjusting ingredient amounts is automatic, but cooking steps and times remain unchanged. Note that not all recipes scale perfectly. Original recipe yields 12 servings.
- 9 uncooked lasagna noodles
- 4 large baking potatoes, peeled and cut into 1-inch chunks
- cup milk
- 1 tablespoon butter
- 1 teaspoon onion salt, or to taste
- Salt and black pepper to taste
- 1 cup shredded Cheddar cheese
- 1 pound bacon
- 1 onion, chopped
- 2 cups dry cottage cheese
- 1 egg
Directions
Step 1: Fill a large pot with lightly salted water and bring it to a rolling boil. Add lasagna noodles 3 or 4 at a time and return the water to a boil. Cook uncovered, stirring occasionally, until noodles are tender but still firm, about 10 minutes per batch. Drain in a colander and lay the noodles flat on wax paper or aluminum foil while finishing the remaining noodles.
Step 2: Preheat your oven to 350F (175C) and grease a 9x11-inch baking dish.
Step 3: Place potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer until tender, about 20 minutes. Drain and let them steam dry for a couple of minutes.
Step 4: Mash the potatoes with milk and butter until smooth. Stir in 1 teaspoon onion salt and season with salt and pepper. Allow to cool slightly, then mix in the shredded Cheddar cheese. Set aside.
Step 5: Cook bacon in a large, deep skillet over medium-high heat, turning occasionally until evenly browned and nearly crisp, about 10 minutes. Add the chopped onion to the hot bacon fat and cook, stirring, until translucent, around 8 minutes. Break the bacon into pieces and combine with the onions. Set aside.
Step 6: In a bowl, mix cottage cheese with the egg and 1 teaspoon onion salt.
Step 7: Assemble the casserole: Place 3 lasagna noodles in the prepared baking dish and spread evenly with the cottage cheese mixture. Layer 3 more noodles on top, followed by the potato-cheese mixture. Place 3 more noodles on top of the potatoes, then spread the bacon and onion mixture evenly over the top.
Step 8: Cover with aluminum foil and bake in the preheated oven until the cheese melts and the casserole is hot, about 30 minutes. Let it rest for 10 minutes before serving.

I couldn't help but chuckle at the individual questioning what was considered "lazy" about these Perogies lol. It's clear they haven't experienced the labor-intensive process of making traditional ones - which, by the way, are absolutely delicious. This recipe offered a quick and convenient way to achieve a comparable taste in a fraction of the time. Crafted for my colleagues at work, who have an insatiable love for perogies. They absolutely adored this dish. I utilized freshly made lasagna sheets and created a masterpiece with layers of cottage cheese, cheesy mashed potatoes, fried sausage, and onions. Topped it all off with a final layer of mashed potatoes, baked to perfection for just over an hour. I prepared this dish for dinner tonight and managed to put it together in about 30 minutes with the help of my three little girls. I believe the key to its simplicity is planning ahead. Utilizing "leftover mashed potatoes" from a previous meal significantly reduced our prep time. While our noodles were cooking for 12-15 minutes, we sautéed our onions until slightly caramelized, fried our bacon, and mixed together the potato and cottage cheese components. I sprinkled minced garlic over the onions just before taking them off the heat and added a touch of sour cream to the potatoes as I typically do with my pierogis (usually I use cream cheese but didn't have any on hand). Our family of 8 has varying preferences when it comes to flavors, so feel free to adjust the seasoning to your liking - more for a zingy taste, less for a milder flavor. Overall, I found this recipe to be a great, straightforward dinner option that reminded me of a pierogi pizza I used to enjoy!

This recipe is an excellent way to enjoy a full perogie casserole. It has all the delicious flavors of perogies and is easy to reheat as leftovers. I decided to enhance it by adding a layer of steamed finely chopped cabbage. I swapped out cottage cheese for ricotta and skipped the onion salt. This dish would make a fantastic addition to a potluck - it's packed with flavor, although a bit intricate to prepare.

Overall, the dish was pretty good. However, it took quite a while to prepare – I spent around 45 minutes to an hour cooking and assembling it in the kitchen. I felt that adding a different top layer beneath the bacon and onion mixture, instead of just noodles, would have enhanced the dish. Despite considering a change, I stuck with the original recipe. If I were to make it again, I would make sure to set aside enough time. Although everyone enjoyed the casserole, surprisingly, no one wanted to have the leftovers, even though there was plenty left. Personally, I found that adding a dollop of sour cream on the side to dip each forkful into enhanced the flavor.

I would never have the courage to try making traditional pierogies, but this alternative is spot on. It's definitely not the healthiest option, but it is incredibly delicious. My husband, who is Polish and grew up on this kind of food, absolutely adores it.
