Ingredients

  • cup bulgur
  • cup boiling water
  • 2 tablespoons vegetable oil
  • 2 cups sliced onions
  • 4 cloves garlic, minced
  • 6 cups thickly sliced zucchini
  • teaspoon dried oregano
  • teaspoon dried basil
  • teaspoon dried marjoram
  • 1 teaspoon ground black pepper
  • 2 eggs
  • 1 cup grated feta cheese
  • 1 cup cottage cheese
  • cup chopped fresh parsley
  • 2 tablespoons tomato paste
  • 1 tablespoon tamari
  • 1 cup grated Cheddar cheese
  • 2 medium tomatoes, thinly sliced
  • 1 tablespoons sesame seeds (optional)

Directions

  1. Place the bulgur in a bowl and pour the boiling water over it. Cover and let it sit until the water is absorbed, about 10 minutes.
  2. Preheat the oven to 350F (175C). Grease a 9-inch square casserole dish and set aside.
  3. While the bulgur is absorbing the water, heat the vegetable oil in a large skillet over medium heat. Add the onions and garlic, cooking them until they are just translucent, about 3 to 5 minutes.
  4. Add the zucchini, oregano, basil, marjoram, and black pepper to the skillet. Cook the zucchini until it is tender but still holding its shape, about 5 minutes more.
  5. In a separate bowl, lightly beat the eggs. Stir in the feta cheese, cottage cheese, and chopped parsley.
  6. Once the bulgur has absorbed the water, add the tomato paste and tamari to it. Mix well until everything is combined.
  7. Layer the casserole: First, spread the bulgur mixture in the bottom of the prepared dish. Then, layer the zucchini mixture, followed by the cheese mixture. Top with the grated Cheddar cheese and arrange the sliced tomatoes on top.
  8. If desired, sprinkle sesame seeds over the top of the casserole.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes, or until the casserole is bubbly.
  10. If you prefer a crispier cheese topping, remove the foil during the last 15 minutes of baking.
