Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

Original recipe (1X) yields 8 servings:

  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • pound beef sirloin, cubed
  • 1 (14.5 ounce) can peeled and diced tomatoes with juice
  • 1 (12 fluid ounce) can or bottle dark beer
  • 1 cup strong brewed coffee
  • 2 (6 ounce) cans tomato paste
  • 1 (14 ounce) can beef broth
  • cup packed brown sugar
  • 3 tablespoons chili powder
  • 1 tablespoon cumin seeds
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 4 (15 ounce) cans kidney beans
  • 4 fresh hot chile peppers, seeded and chopped

Directions

Step 1: Heat oil in a large saucepan over medium heat. Add chopped onions and minced garlic. Cook for about 2 minutes until softened and fragrant.

Step 2: Add the ground beef and cubed sirloin. Cook for 10 minutes or until the meat is well browned and the onions are tender. Stir occasionally to prevent burning.

Step 3: Once the meat is browned, stir in the diced tomatoes (with juice), dark beer, brewed coffee, tomato paste, and beef broth. Stir to combine.

Step 4: Season the mixture with brown sugar, chili powder, cumin seeds, cocoa powder, oregano, cayenne pepper, ground coriander, and salt. Mix well to incorporate all the spices.

Step 5: Add 2 cans of kidney beans and chopped hot chile peppers. Stir them into the mixture.

Step 6: Reduce the heat to low and simmer the mixture for 1 hours, stirring occasionally to ensure even cooking. The flavors will meld together during this time.

Step 7: After 1 hours, add the remaining 2 cans of kidney beans to the saucepan. Stir well and simmer for an additional 30 minutes, allowing the beans to heat through and absorb the flavors.

Step 8: Taste the chili and adjust seasoning if needed. Serve hot, and enjoy!
