Four-Cheese Chicken Carbonara Recipe
Ingredients

- 1 (16 ounce) package thick-cut bacon
- 1 (16 ounce) package penne pasta
- cup olive oil
- cup butter
- 3 tablespoons minced garlic
- 3 teaspoons ground black pepper, divided
- 3 skinless, boneless chicken breasts, sliced
- 2 cups heavy whipping cream
- 1 cup grated Parmesan-Romano cheese blend
- 1 cup shredded Colby Jack cheese blend
- 3 eggs, beaten
Directions
- Prepare all ingredients and have them ready on the counter.
- Place bacon in a large skillet over medium-high heat. Cook, turning occasionally, until evenly browned, about 10 minutes. Transfer to paper towels to drain, then chop into small pieces once cooled.
- Bring a large pot of lightly salted water to a boil. Add penne pasta and olive oil. Cook, stirring occasionally, until pasta is tender yet firm to the bite, about 8 minutes. Drain and set aside.
- While the pasta cooks, melt butter in a deep skillet over low heat. Add the chopped bacon, minced garlic, and 1 teaspoon of black pepper. Saut for 2-3 minutes until fragrant.
- Increase heat to medium. Add the sliced chicken and cook, stirring occasionally, until no longer pink in the center and juices run clear, about 5-7 minutes.
- Pour in the heavy cream and add the Parmesan-Romano cheese along with the remaining 2 teaspoons of black pepper. Stir and heat for 3 minutes until the mixture is warm.
- Add the Colby Jack cheese and stir until fully melted. Then, stir in the beaten eggs and bring the sauce to a gentle simmer.
- Add the drained pasta to the skillet. Toss thoroughly to coat the pasta evenly with the creamy sauce. Serve immediately.

I've been looking for a Carbonara fusion recipe, along the lines of Fettuccine Alfredo-Carbonara mix and...It needed to be easy. I made this for the family, doubled (I have a large family). They couldn't stop raving! Don't add the eggs until the mixture has cooled to a simmer. I mixed a little sauce into the eggs to bring the temp of the eggs up before adding to the pot.

It was really good. I used a half pack of bacon and omitted the oil and butter and it was still very rich. I couldn't imagine how rich and greasy it would be if I followed the recipe. I added some peas for color as shown in the picture.

I've been doing this (carbonara) for decades. IMO, too bacon "forward" (1# bacon and chicken each). Same comment re black pepper. And adding oil to pasta water? Oil floats on water, pasta doesn't float. Adding it doesn't keep pasta from sticking. Stirring while cooking does The idea of a sauce it you want it to coat the pasta. A "greased" noodle... what do you think that does? Don't believe me? Google pasta manufacturer websites

This was a really good dish but needed a few small modifications to be a winner. Less pepper was the big one, maybe personal taste but that's a lot of pepper for any dish and thankful I cut it back. I also didn't put the full amount of garlic in because we wanted to taste the other flavors and was afraid it would over power the dish. With those changes it was a big hit here and the kids asked for it again. It made a ton and was very rich.

This is recipe is great. But, I have to admit, I forgot the egg part. I'm not sure what that is supposed to add, but this is great as is! Very easy. I used the air fryer for my bacon. It seems less greasy than trying to take the grease off with paper towels. Either way, this is great. I didn't use all of the pepper either btw.

Great recipe! I no longer fear the carbonara! Only made a couple changes. Used three cheese mix I had in the fridge parm/regg/Asiago. And added 2 cups of frozen green peas at the same time as adding the cheese. My hubby loves carbonara with peas in it. I love it that way now too! Kicked it up a notch at serving time with fresh grated nutmeg on top! This has become a regular in our weekly dinner plan now! Thank you!

Very flavorful. I used Asiago cheese instead of parm and added sliced Bella mushrooms during the Sautéed process. Also I do not add the pasta to the sauce. I keep it separate till plating. Definitely worth it

This is delicious! I tweaked it just a bit and sprinkled some salt and cayenne pepper and omitted the second round of black pepper on the chicken and also grilled it separately then added it at the end. I also added Asiago to the, ramono and Parmesan cheese blend and peas. It was a bit too rock and thick so next time I’m going to try to add about a 1/4 C white cooking wine. Lastly I used angel hair pasta. My family loved this!

Delicious! FYI that it was a little peppery for one of my kids (not for me, though), so if you are serving this to little ones you might want to reduce the pepper. I also think it would be a great keto meal if served with spaghetti squash or zucchini noodles.

My family loved this! I made the bacon in advance and used some left over precooked chicken breast and it was still delicious! I subbed the penne for a higher protein spaghetti noodles and prepared them as stated on the box, so I didn’t use all the oil that the recipe called for so a few changes but definitely will make it soon!

This dish was very tasty, but too rich for me. I didn't add the oil to the pasta. Next time (yes, I will make it again), I will cut down on the butter and look for other ways to lighten it up without losing too much of the flavor and creaminess.

This was delicious. I made it as written, with the exception of changing up the pasta as it's what I had. My family loved it and 3 of them already went back for seconds. Very flavorful!
