Ham Tetrazzini Recipe

Cook Time: 15 minutes

Ingredients

  • 6 ounces spaghetti
  • 3 quarts water
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 2 tablespoons chopped onion
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup water
  • 1/2 cup shredded Cheddar cheese
  • 1 cup diced ham
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped pimento peppers

Directions

Step 1: Bring a large pot of lightly salted water to a boil. Add the spaghetti and cook for 8 to 10 minutes, or until al dente. Drain the pasta and set aside.

Step 2: While the pasta is cooking, melt the butter in a saucepan over medium heat. Add the chopped onion and cook, stirring occasionally, for about 5 minutes, or until the onion becomes soft and translucent.

Step 3: Stir in the condensed cream of mushroom soup, 1/2 cup water, and shredded Cheddar cheese. Continue to heat the mixture, stirring often, until the cheese fully melts and the sauce is smooth.

Step 4: Once the cheese is melted, mix in the diced ham, cooked and drained pasta, chopped pimento peppers, and chopped fresh parsley. Stir everything together until well combined.

Step 5: Continue cooking for a few more minutes until the entire mixture is heated through. Once done, serve and enjoy!

Recipe Tip

You may substitute 3 cups of leftover cooked pasta for the spaghetti in this recipe for a quicker preparation.

This is an awesome recipe!! I agree ~ it tastes as though you have worked for hours when in reality it is so super easy! The first time I made it exactly as written and received rave reviews from my family. The next time, I played with the recipe just a bit: I didn't have any fresh parsley, so I added in about 1/2 cup frozen broccoli florets (thawed) with the ham and also tossed in a few sliced mushrooms (from a jar); I was a little low on cheddar cheese, too, so I added some Parmesan. It still turned out wonderful. I love recipes that give you some freedom to be flexible (and still taste great!) This one is definitely a family favorite!

I made this recipe exactly as written and it is excellent. I did place the entire mixture into a greased casserole dish and covered it with about a cup of mozzarella cheese and baked it at 350 until bubbly, then broiled for a few minutes until the cheese was melted and browned. This extra step moved it from Excellent to FABULOUS! Update 2025: This recipe is super versatile... I've added leftover bacon and ham and put bread crumbs on top, then the cheese. Great recipe!

Added broccoli, chopped yellow bell pepper, canned mushrooms and half a cup of sour cream, made a double batch and shared with neighbors. A great " clean out the fridge " base recipe. Wouldn't all fit in the pan, so l put everything in a large casserole dish, topped with panko and baked at 375.

This was a wonderful recipe and the only reason it’s not 5 stars is because I made changes based upon our taste and what I had on hand. I used olive oil instead of butter and sautéed 3 chopped garlic cloves with the onion. Based on other reviews I used half low sodium chicken broth and wine for the liquid. Also added a pinch of black pepper and about 1/4 teaspoon crushed red pepper to the cheese mixture. I didn’t have spaghetti so I used whole wheat rotini for the pasta. Also added minced red pepper and about 1/2 cup frozen peas, mostly for color. Because I had time, I baked this at 350 for about 1/2 hour after topping with mozzarella and additional Parmesan cheese.. This was so yummy and the leftovers tasted even better!

I’m giving this the benefit of the doubt because I like most before me change a lot. I used whole wheat pasta because it’s all I had. My bad. No mushroom soup and I’m allergic to dairy so I sautéed 1.5 c chopped Bella mushrooms with the onion. Added a package of Daiya Alfredo sauce, 1/2 c water and 1/4 c white wine. Used oil preserved dried tomato instead of pimento, and 1/4 broccoli heads chopped as I had no parsley. Topped with a little Parmesan. Other than the WW pasta actually pretty good

I doubled the recipe. I used 16 oz elbow macaroni. I sauteed onion, green pepper , 1 teaspoon of minced garlic and fresh ground pepper in 1 tbsp of melted butter. I used 1 can of chicken broth instead of water, 2 cans of Healthy Request condensed mushroom soup and 1 cup shredded cheese. Once cheese melted, I mixed that with the drained noodles and 2 cups of leftover Easter ham. Everyone in my family liked it!

I used white wine in place of water and added some milk. Also I did not have pimiento so I used red peppers and sautéed them with the onion. I used dried parsley because I did not have any fresh on hand. I followed JulieCC's advice and added garlic too! Turned out great!!

Substituted milk for water and added a can of mushrooms. After all was combined, placed in casserole dish, topped with freshly grated Parmesan cheese and baked for 20 minutes. Great ham dish.

OMG it was so good with the changes I read or added. Did not try original recipe after reading suggestions but it is probably good too. I used casarecce pasta (sort like a ziti but not as heavy) instead of spaghetti, thick julienned the ham instead of chopped, fat free cream of mushroom and cabots 75% fat free cheddar. I did the 1/4 water & White wine, added the 1/4 parmesan, I sautéed the onions with sweet red peppers chopped, garlic and added some green peas. Only from my experience with cheese sauces and fondues I added a little nutmeg and mustard after the cheese. I decided to cook in casserole dish in oven so added a little fresh ground black pepper and dried fried onions on top..... Yum!

Delicious! I doubled tge recipe. Also made a roux instead of canned cream of mushroom or chicken soup. My roux was started with sautéed mild red peppers and red onions in EVOO. Then flour and broth. Then mild cheddar cheese. Seasoned with garlic and onion powder, s&p, nutmeg, and ginger. Added ham and noodles. Tastes great!

Nice way to use up Christmas ham leftovers. Came out REALLY thick so I used some of the pasta water and that helped. Also added about 2TBPS of cream just for fun. Wanted to use frozen peas but didn't have any so just sprinkled some canned ones on top just before serving. Husband loves it and I thought it was pretty awesome too! Next time will try some capers and mushrooms.

I have been making this very same recipe regularly since I was a kiddo in the early 1980’s, and I love it still today in 2025. It was called “Party Tetrazzini” then, lol. It made me love onions at 7 years old; they are necessary, mince them hard if they are not your thing. Add a few drops of lemon juice to the undrained leftover pimentos, and they will last way longer. I always use extra sharp cheddar— and bucatini noodles heighten the recipe something serious… in a very bursting way~~~

I used diced red bell peppers and cream of chicken soup and the family gave rave reviews. Needs a little salt and pepper to the sauce but otherwise really good. Also trying to find a green veggie that my kid will eat to give more of a crunch.

Very versatile recipe. I changed this recipe up a bit to better our personal taste preferences. I added chopped green onions, a can of diced mild chilies, and doubled the cheese. I also added garlic powder and a light shake of red cracked pepper. This recipe could be used with any protein! Yummy.

This is unbelievable. The only difference is I added a small can of mushrooms using the liquid as part of the water for the soup I've made it often. The leftovers are just as good as the fresh. Lately I make extra and freeze it in individual servings. Many times all I need is my microwave. YUMMY
