Dutch Oven Pork Stew Recipe

Ingredients
- 1 (2 pound) boneless pork shoulder, cut into 1-inch cubes
- 1 teaspoon kosher salt
- teaspoon ground black pepper
- 2 tablespoons canola oil
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 tablespoon dried chives
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- teaspoon dried dill weed
- 1 (26 ounce) jar pasta sauce
- 1 (14.5 ounce) can diced tomatoes, undrained
- 3 medium Yukon Gold potatoes, cut into 1-inch pieces
- 2 cups frozen whole kernel corn
- 2 cups quartered fresh button mushrooms
- 1 cup baby carrots, halved lengthwise
Directions
- Sprinkle the pork cubes evenly with kosher salt and ground black pepper.
- In a large Dutch oven, heat the canola oil over medium-high heat. Add half of the pork cubes and cook, stirring occasionally, for about 5 minutes or until browned. Remove the pork to a paper towel-lined plate and repeat with the remaining pork cubes.
- Once the pork is browned, add the chopped onion, celery, dried chives, dried parsley, dried basil, and dried dill weed to the Dutch oven. Stir occasionally and cook for 8 to 10 minutes, or until the onions are soft and translucent.
- Pour in the pasta sauce, diced tomatoes (with their juices), and add the cubed Yukon Gold potatoes, frozen corn, quartered mushrooms, and halved baby carrots. Stir well to combine.
- Return the browned pork to the Dutch oven, stirring to mix everything together. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 1 1/2 hours, stirring occasionally, until the meat and vegetables are tender.
Cook's Note
You can also prepare this dish in a slow cooker. For slow cooking, set it on Low for 8 hours or High for 4 hours.
