A-Maize-ing Corn Chowder Recipe

Ingredients:

  • 6 slices bacon
  • 1 onion, chopped
  • 2 potatoes, peeled and cubed
  • cup water
  • 2 cups milk
  • 2 (14.75 ounce) cans cream-style corn
  • 1 (15.25 ounce) can whole kernel corn
  • teaspoon salt
  • Ground black pepper to taste

Directions:

  1. Fry the bacon in a Dutch oven over medium heat until crisp. Remove the bacon and set aside, reserving 2 tablespoons of the drippings.
  2. Crumble the bacon and set aside for later use.
  3. In the same Dutch oven, saut the chopped onion in the reserved drippings until it becomes tender.
  4. Add the cubed potatoes and water to the pot. Cover and simmer for about 15 to 20 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, stir in the milk, both cans of cream-style corn, whole kernel corn, salt, and pepper to taste. Continue cooking, stirring occasionally, until the mixture is heated through.
  6. Serve the soup in bowls, topping each serving with the crumbled bacon.
