A-Maize-ing Corn Chowder Recipe
Cook Time: 35 minutes
Ingredients:
- 6 slices bacon
- 1 onion, chopped
- 2 potatoes, peeled and cubed
- cup water
- 2 cups milk
- 2 (14.75 ounce) cans cream-style corn
- 1 (15.25 ounce) can whole kernel corn
- teaspoon salt
- Ground black pepper to taste
Directions:
- Fry the bacon in a Dutch oven over medium heat until crisp. Remove the bacon and set aside, reserving 2 tablespoons of the drippings.
- Crumble the bacon and set aside for later use.
- In the same Dutch oven, saut the chopped onion in the reserved drippings until it becomes tender.
- Add the cubed potatoes and water to the pot. Cover and simmer for about 15 to 20 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, stir in the milk, both cans of cream-style corn, whole kernel corn, salt, and pepper to taste. Continue cooking, stirring occasionally, until the mixture is heated through.
- Serve the soup in bowls, topping each serving with the crumbled bacon.
