Ingredients

  • 6 ounces whole wheat penne pasta
  • cup pumpkin puree
  • cup low-sodium chicken broth
  • cup nonfat milk
  • 1 teaspoon margarine
  • teaspoon onion powder
  • teaspoon ground black pepper
  • teaspoon salt
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
  • 1 pinch ground ginger
  • cup grated Parmesan cheese, plus more for serving

Directions

Step 1: Fill a large pot with lightly salted water and bring it to a rolling boil over high heat. Once boiling, add the penne pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until it is cooked through but still firm to the bite, about 11 minutes. Drain the pasta well in a colander.

Step 2: While the pasta is cooking, heat the pumpkin puree, chicken broth, nonfat milk, margarine, onion powder, black pepper, salt, cloves, nutmeg, cinnamon, and ginger in a large skillet over low heat. Stir occasionally, and heat until the mixture is warmed through, about 5 minutes.

Step 3: Once the sauce is heated, add the drained penne to the skillet and toss the pasta in the pumpkin sauce until well coated. Stir in the grated Parmesan cheese, allowing it to melt into the sauce for extra creaminess.

Step 4: Serve the pasta hot, topped with additional grated Parmesan cheese, if desired. Enjoy your warm, flavorful meal!
