Instant Pot® Teriyaki Beef Recipe
Ingredients
- 2 cups water
- 2 cups uncooked brown rice
- 1 tablespoon olive oil
- 1 pounds boneless round steak, sliced into -inch strips
- 1 small onion, diced
- cup water
- cup soy sauce
- 6 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 tablespoons honey
- 3 tablespoons water
- 1 tablespoon cornstarch
- 3 cups broccoli florets
- 4 green onions, chopped
Directions
Step 1: In a 4-quart pressure cooker, combine 2 cups of water and brown rice. Secure the lid and place the pressure regulator over the vent as per the manufacturer's instructions. Heat the cooker until steam escapes in a steady flow with a whistling sound. Adjust the temperature to simmer and cook the rice for about 22 minutes, or until tender. Allow the pressure to release naturally, which should take around 5 to 10 minutes. Once done, unlock the lid and remove it.
Step 2: At the same time, turn on a 6-quart multi-functional pressure cooker (like an Instant Pot), add the olive oil, and select the 'Saut' function. Add the sliced steak and diced onion to the hot oil, sauting for about 3 to 5 minutes until browned.
Step 3: While the steak and onion are browning, whisk together cup of water, soy sauce, minced garlic, and grated ginger in a small bowl. Add this mixture to the browned steak in the pressure cooker. Secure and lock the lid, then cancel the 'Saut' function. Set the cooker to high pressure according to the manufacturer's instructions, and cook for 11 minutes. Wait for 10 to 15 minutes for the pressure to build up before carefully releasing it using the quick-release method, which should take around 5 minutes. Once the pressure is released, unlock and remove the lid.
Step 4: Stir in the honey. In a small bowl, combine 3 tablespoons of water and cornstarch, then add this mixture to the pressure cooker. Add the broccoli florets and select the 'Saut' function again. Stir constantly as the sauce thickens and the broccoli cooks for 3 to 5 minutes. Once done, turn off the cooker.
Step 5: Serve the steak and broccoli mixture over the cooked rice. Garnish with chopped green onions and enjoy!
Cook's Note:
If you prefer your broccoli to be more tender, you can close the lid and reseal the pressure valve for an additional 3 to 5 minutes of sitting time.

Decent recipe. I've tried it twice. Initially found it a bit plain. Second attempt, I mixed in a tablespoon of oyster sauce with the soy sauce, and it really elevated the dish.
