Keto Zuppa Toscana Recipe
Ingredients

- 1 pound mild Italian sausage
- 1 teaspoons red pepper flakes
- 4 slices bacon, cut into -inch pieces
- 1 large onion, diced
- 1 tablespoon minced garlic
- 5 (13.75 ounce) cans low-sodium chicken broth
- 1 cup cauliflower florets
- 1 cup heavy cream
- bunch spinach, tough stems removed
Directions
- Heat a Dutch oven over medium-high heat. Add the sausage and red pepper flakes; cook until the sausage becomes crumbly, browned, and no longer pink, approximately 10 minutes. Drain any excess grease and transfer the sausage to a bowl.
- Reduce the heat to medium. In the same pot, cook the bacon until it becomes crisp, about 10 minutes. Drain the bacon, leaving a few tablespoons of drippings in the pot.
- Stir in the diced onion and minced garlic. Cook until the onions are soft and translucent, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the cauliflower florets to the boiling broth. Continue boiling until the cauliflower is fork-tender, around 20 minutes.
- Reduce the heat to medium again. Stir in the heavy cream and the cooked sausage, allowing the mixture to heat through.
- Just before serving, stir in the spinach until it wilts into the soup.

I made some significant changes to the original recipe for this soup that I have enjoyed in the past! I opted to create my own turkey Italian sausage rather than using store-bought, replaced heavy cream with coconut milk, and swapped spinach for kale. Absolutely outstanding! Definitely planning to prepare it again!

Rewritten review: I omitted the bacon (not a fan of bacon) and added extra broth to serve my large family, and the dish turned out fantastic. The spiciness from the crushed red pepper was just right, but you may want to reduce the amount if you prefer it milder. Even my kids (aged 12, 13, & 14) enjoyed it immensely.
