Spicy Lime and Dill Grilled Fish Recipe
Ingredients

- Cooking spray
- 2 pounds haddock fillets, cut into thirds
- 6 tablespoons butter, melted
- Juice of 1 lime, with pulp
- 1 tablespoon dried dill weed
- 1 teaspoon kosher salt
- 1 teaspoon red pepper flakes
- 1 onion, thinly sliced into 1/8-inch rounds
Directions
- Step 1: Preheat the grill to medium heat and lightly oil the grate.
- Step 2: Place four sheets of aluminum foil (8x10 inches each) on a flat surface and coat with cooking spray.
- Step 3: Arrange equal portions of haddock in the center of each foil sheet.
- Step 4: In a small bowl, mix melted butter, lime juice, dill, kosher salt, and red pepper flakes. Drizzle evenly over the fish.
- Step 5: Top each portion with onion slices.
- Step 6: Bring opposite ends of the foil together and fold to seal. Roll the side edges toward the fish to secure the packets.
- Step 7: Place packets on the grill and cook for 5-7 minutes per side, until the fish flakes easily with a fork.
Cooks Note: This method works well with other white fish varieties such as sea bass, walleye, or orange roughy.

I had a wonderful experience with this recipe! Thanks to our flourishing dill plant, I decided to incorporate fresh dill into our fish dish. The recipe was excellent as it allowed the natural flavor of the fish to stand out. We opted for Mahi Mahi and substituted 1-2 tablespoons of coconut oil for the 6 tablespoons of butter. I also reduced the amount of pepper flakes to around 1/2 teaspoon to ensure it wasn't too spicy (which it wasn't). Grilling the fish on foil with folded edges to contain the liquid and prevent it from slipping through the grill grates was a smart move. I will definitely be making this dish again!

This recipe was fantastic! The combination of dill and lime juice gave the dish a unique and delicious flavor. I adjusted the amount of red pepper flakes to suit my taste, but it still added a nice kick. I used fresh walleye fillets from the beautiful Missouri River. My husband, who is extremely picky, loved it. I've added this recipe to my favorites and will definitely make it again. You won't be let down by trying this out!

I prepared this dish using fresh Cod and Dill, omitting the Red Pepper and Salt. Surprisingly, my wife, who typically avoids fish and spicy flavors, absolutely enjoyed it. I, too, found it delightful, especially since I am following a low-sodium diet.

Excellent recipe! I opted for frozen white/pan fish and followed the instructions as recommended, with the additional touch of a topping made from sour cream, avocado, and diced tomatoes before wrapping the fish in foil. The combination of flavors was absolutely delightful!

I decided to try cooking with basa fillets for the first time, and unfortunately, I found the dish rather bland tonight. I couldn't tell if it was the fish itself or the recipe that was to blame. My husband enjoyed it, but he tends to enjoy any fish dish. I might give this recipe another try using the recommended type of fish, or experiment with a different variety that I'm more familiar with.
