Doritos Chicken Casserole Recipe
Ingredients
- 1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos), crushed
- 3 cups chopped cooked chicken
- 2 cups shredded Mexican cheese blend, divided
- 1 cups salsa
- 1 (15.25 ounce) can corn, drained
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (10.5 ounce) can condensed cream of chicken soup
- 8 ounces sour cream
Directions
Step 1: Preheat the oven to 350F (175C). Lightly spray a 9x13-inch baking dish with cooking spray.
Step 2: Spread the crushed tortilla chips evenly across the bottom of the prepared baking dish.
Step 3: In a large mixing bowl, combine the chopped chicken, 1 cup of shredded cheese, salsa, corn, condensed mushroom soup, condensed chicken soup, and sour cream. Stir until well mixed.
Step 4: Pour the chicken mixture over the layer of crushed chips in the baking dish, spreading it out evenly.
Step 5: Place the baking dish in the preheated oven and bake for 20 minutes.
Step 6: After 20 minutes, remove the dish from the oven and sprinkle the remaining 1 cup of shredded cheese over the casserole. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbling.
Recipe Tip
You can substitute 1 can of Rotel tomatoes with green chiles for the salsa for an extra kick!

This is an excellent recipe, and I tweaked it a bit to my tastes of course. Added a little taco seasoning to the cooked chicken and a little to the mixture before cooking. Instead of using canned corn, I used a bag of frozen (keeps from having to drain the can). Used the Rotel as others had suggested instead of salsa. Did not put the Doritos on the bottom, but put them on top for the last 5 minutes of cooking (on top of the cheese when adding it), because it keeps the Doritos nice and crunchy. We all very much enjoyed this!

As I do with all of the recipes, I read the Reviews first. I made a few of the recommended changes and a few of my own. My grocery store pulled two of their cooked chickens while I shopped - a great time saver! I did not use sour cream, but instead used almost a full large can of cream of chicken soup, no cream of mushroom and instead used 1/2 of a big jar of Tostitos Medium Salsa con queso. I too used the Ro-tel tomatoes but those with lime and cilantro and also added the Mexican shredded cheese. Placed about 2 pounds of chicken in bowl, sprinkled with chili powder and a spicy garlic/hot chili blend spice, dried cilantro and then added all of the above. Lightly sprayed (with olive oil mister) the 13x9 pan and crushed Nacho cheese Doritos. Filled with chicken mixture and baked at 350 for about 25 minutes. Removed, sprinkled more cheese and topped with additional Doritos (lightly broken) and baked an additional 10 minutes. Served with a boxed garlic chicken rice pilaf that I added a small can of green chilis to and also used hot chili olive oil for the oil portion needed. Everyone loved it - so glad I found the recipe. Will definitely make again.

Based on other reviews I made some changes. I put half the 9.5 oz bag of crushed Nacho Doritos on the bottom. I used a whole rotisserie chicken from Sam's - chopped. I sauteed a large onion and a chopped bell pepper and added that. I used only the cream of chicken soup (no mushroom soup). I used a medium spiced homemade salsa. I added a drained can of black beans, a packet of medium spiced taco seasoning, and I used 1 teas of chili powder and 2 teas of cumin. I baked it for 40 min since all the ingredients were room temperature. Then I put the other cup of cheese on top and then the other half bag of crushed Doritos on top of the cheese. This was absolutely DELICIOUS! Thank you!

I made this last night. My picky eater was a bit skeptical but was pleasantly surprised at how good it was. The Doritos in my cupboard were Cool Ranch and the 9 1/2 oz. size. That amount was plenty for the recipe. I put 2/3 of the chips in the bottom of the pan. I used every other ingredient called for in the recipe. I put it all together and into the oven and then realized that I had forgotten to mix in the cheese. I just decided to use the whole amount of cheese on top. When I took it out of the oven I sprinkled the other 1/3 of the bag on top as suggested by several reviewers. And then put the two cups of shredded cheese on top. I cooked the second stage a big longer than the 5 minutes called for, closer to 10 - 15 minutes. I even shared some with neighbors who complimented me on how good it was. Thanks for sharing this delicious and EZ to make recipe. UPDATE: We had a good bit of leftovers and after 1 or 2 servings did not want to get burned out on it. So for several mornings I took a serving of it and topped it with some salsa and then a fried egg on top. It was delicious for breakfast!

From just the smell of this in the oven, this was going to be amazing. And it was! I used the original recipe with the salsa and boy oh boy.. hubby went back for thirds! I added some extra chips before the cheese went on for some crunchy crunch. I also broiled the top off a bit before taking it out of the oven. I also threw in some green onion. This was beyond a winner! Two bites in and hubby said this is a keeper. I agree! Wonderful!

This was very good. I used ground turkey instead of chicken, cooked it in a skillet in some salt/pepper, cumin, and cayenne, before putting it into the casserole dish. I topped the casserole with the cheese AND the rest of the crushed Doritos, and the final product tasted just like a taco. Everyone really liked it, and every single one of us had seconds. My reason for the 4 stars is twofold: personal preference (I don't like to eat mexican flavors more than once a month), and re-heating it with the chips kinda makes them chewy. I'll def make this again, though. Next time, I'll have scallions and sour cream to top it. Very good! Thanks for the recipe!!

Everyone loved it ! So much flavor. I ended up using chicken tenderloins and seasoned with S&P and Cajun seasoning and just cut them bite sized and browned them in a pan.. very filling! This is now saved a family favorite!

Yummy. Although the recipe fails to tell you to add the can of corn. I also add a few more crushed doritos to the top with the extra cheese for the last 5 minutes.

Definitely making again! I changed this up some though. I only used 1 can of cream of chicken (no cream of mushroom). I also do not add sour cream but put on top when serving. I added a can of drained black beans. I add crushed Doritos on top for a crunch then another layer of cheese.

I added some taco seasoning to the chicken. I left out the cream of mushroom soup. I added about another cup of cheese. I split the Doritos, half on bottom and half on top. I also had to bake for 40 minutes instead of 25 to get it hot all the way thru. This was a very good casserole. I do think it could use another cup of chicken. Would be good as a dip served with chips too. Adding beans, olives, or jalapeños would be good additions. It makes a lot so I hope the leftovers reheat okay?

Followed the recipe except substituted a can of cheddar cheese soup for the cream of mushroom soup. To save time I used a Costco rotisserie chicken. Everyone loved it and have put it into dinner rotation.

This was really good! Family loved it. I did season everything with a packet of taco seasoning while mixing in the bowl. I also used Ro-Tel as I was out of salsa. Served with rice, broccoli, lime and cilantro. I'd like to try this filling in taco's, enchiladas, quesadillas etc. :)

I left out the mushroom soup & added black beans. I also just cut the chicken into chunks & seasoned with taco seasoning. I sprinkled the chips on top so leftovers wouldn't be soggy. It was decent but it was lacking something. I probably won't make again.
