Meatloaf Recipe

Ingredients:

  • 1 cup soft bread crumbs
  • cup milk
  • 1 pounds ground beef
  • 1 onion, chopped
  • cup diced green bell pepper
  • 3 tablespoons steak sauce (e.g. Heinz 57)
  • 1 egg, slightly beaten
  • 1 teaspoons salt
  • Ground black pepper to taste
  • cup steak sauce, or more to taste

Directions:

  1. Preheat the oven to 350F (175C). Lightly grease an 8x4-inch loaf pan.
  2. In a small bowl, combine the bread crumbs and milk. Set aside to let the bread crumbs soften.
  3. In a large bowl, mix the ground beef, chopped onion, diced bell pepper, steak sauce, beaten egg, salt, and black pepper.
  4. Add the softened bread crumb mixture into the meat mixture and use your hands to combine everything thoroughly.
  5. Transfer the mixture into the prepared loaf pan. Smooth and pack the mixture into an even layer.
  6. Brush the top of the meatloaf with cup of steak sauce.
  7. Bake in the preheated oven for about 1 hour or until the meatloaf is no longer pink in the center. You can check the doneness by inserting an instant-read thermometer into the center of the meatloaf. It should read at least 160F (70C).
  8. Once baked, allow the meatloaf to stand for 5 minutes before slicing to retain its juices.

Recipe Tip:

For the soft bread crumbs, you can use about 2 slices of bread, torn into pieces.

The Best Meatloaf

Meatloaf is a quintessential comfort food that has been a staple in American households for generations. It's easy to make, satisfying, and versatile, which is why it holds a special place in the hearts of many. The recipe for the best meatloaf brings together ground beef, fresh vegetables, and a dash of steak sauce to create a savory, moist loaf that's perfect for any family dinner. But what makes meatloaf so universally beloved, and where did this dish originate?

History of Meatloaf

The history of meatloaf dates back to ancient times, with early versions of the dish being found in Roman and medieval European cookbooks. However, the version we recognize today as American meatloaf evolved in the United States in the 19th century. It was during the Great Depression that meatloaf gained widespread popularity. With the cost of meat rising, home cooks turned to ground beef, which was less expensive, to create filling and affordable meals. This dish became a way to stretch out ingredients and feed large families on a budget, making it an enduring symbol of resourceful American cooking.

Regional Variations

While meatloaf is beloved across the United States, different regions have developed their own unique takes on the dish. In the South, for example, meatloaf is often paired with a tangy tomato-based sauce or topped with barbecue sauce, adding a smoky twist. In the Midwest, it's common to find meatloaf made with a combination of beef and pork, giving it a richer texture. In Pennsylvania, you might even find meatloaf prepared with a mix of beef, veal, and porkknown as a meatloaf triothat provides a deeper, more complex flavor. Despite these variations, the fundamental ingredients of ground beef, breadcrumbs, eggs, and seasonings remain consistent.

What Sets It Apart?

Meatloaf differs from similar dishes like meatballs or burgers in several key ways. The most significant difference lies in the cooking method: meatloaf is baked as a loaf in the oven, while meatballs are often fried or simmered, and burgers are grilled or pan-fried. The loaf shape also allows the flavors to meld together more cohesively, giving it a dense, yet tender texture. Additionally, meatloaf usually incorporates a binding agent like breadcrumbs and milk, making it softer and more moist than a patty-style burger. Its also often topped with a glaze, such as ketchup or barbecue sauce, which caramelizes during baking, adding a delicious sweet-savory finish.

Where is Meatloaf Typically Served?

Meatloaf is typically served as a main course in family-style meals, particularly for dinner. In many American households, its a dish that's passed down through generations. It's often paired with sides like mashed potatoes, green beans, or macaroni and cheese, creating a wholesome, comforting meal. Meatloaf sandwiches are also popular for leftovers, with a slice of meatloaf placed between two slices of bread, sometimes with a dollop of ketchup or mustard. Its a meal that is both nostalgic and practical, perfect for weeknight dinners or casual gatherings.

Interesting Facts About Meatloaf

Finally. A meatloaf that tastes like a meatloaf is supposed to. I have tried a bunch of recipes, and none were quite right (none were even close to my mom's). This was the one. I did read reviews and noted that if you use all A1, it's kind of strong, so I did the A1 in the meatloaf and brushed the top with a bbq sauce I had instead. Perfect. Was very happy. Went to 2-1/2 pounds of meat/2 eggs and it needed to cook longer - did one hour as called for, then upped the temp to 375 for another 15-20 minutes. Didn't dry it at all.

This really is the best meatloaf! It's not bland like most meatloaf recipes. I used a very lean meat ground meat, it was so moist! Good-bye dry meat loaf! I raised the servings to 8, added two full eggs rather than the 1 1/3, used the Bold & Spicy A-1 sauce to give it extra zing..Mmmm, breadcrumbs I had in the freezer that I had made from whole- wheat bread, toasted, broken up, and put it a Cusinart blender that has super sharp blades. Left out the green peppers as I did not have any, didn't miss them, though I am sure you could add what you like and it would remain awesome providing the liquid level of this recipe is kept in balance with items added.

I found this recipe to be a top choice in our home. A favorite Go-To. Sorry to cherry pick your recipe but I did make a few alterations. First my kids don't care for crunchy vegs so i sauteed them on low heat w butter and olive oil(salt, pepper, Italian seasoning, garlic and onion powders) to soften them before adding to the mix. Second, I leave out all other seasoning and add one pack of McCormick Meatloaf Seasoning. Third and finally, I make this in the morning and put it, covered, in the fridge. I take it out 1 hour before placing in the oven. Putting it in the fridge seem to allow all the flavors to mead. The added A-1 steak sauce on top is a crowd pleaser and a must! Don't overcook! Thank you

This was a delicious meatloaf! I was low on A1, so I also used Heinz 57. Also added diced jalapeños and mushrooms since we are all big fans of heat in this house. I doubled it and made 2 loaves, so total cook time was about 1 hour and 20 minutes.

Though I am sure the original recipe is delicious, I found substitutions I made because some ingredients were missing made the most amazing meatloaf. I had 3# of burger to make before it's best by date so I doubled the recipe. I was out of onion but had shallots so substituted 2 large shallots instead of 2 onions. I was out of milk but had sour cream so I subbed that for the milk & un-toasted sourdough bread for the soft breadcrumbs. Finally I didn't have steak sauce but did have a can of HUNTS seasoned sauce for meatloaf in it's place. everything else was followed and This is the best meatloaf I have ever had! Thank for sharing!!

Omgggg this was so delicious!!!! It was moist and cooked to perfection. I tweaked it a bit based on past reviews and even still my husband was impressed. Instead of regular bread I used stove top turkey stuffing and instead of steak sauce I used Diana’s BBQ sauce. I also used minced veal instead of beef!

I've made this recipe 3 times in the past month. My only edit was that I cook the onions and peppers before adding them into the mix. If I don't have a bell pepper in the house, I substitute sweet peppers as I always have them. It turns out moist and delicious every time. The cook time is perfect for those of us at sea level. Leftovers are always just as yummy. My husband threw out his old recipe since he can't beat this one for taste and texture. It's a keeper.

My son had friends over yesterday and i doubled the recipe for 6 big appetites. We, however, shaped them and cooked on wire rack to lose the drippings. Also, added garlic powder because we put it on everything! Thanks for the share!

I like this recipe but one onion is a bit much. It was a bit overpowering. Otherwise, it was a great recipe. I ended up glazing the top with bbq sauce the last 20 minutes.

This recipe is not only a little taste of Heaven but it’s the most beautiful meat loaf I’ve ever put in the loaf pan. I used a bit more steak sauce, used minced onions instead of the fresh onion because it saved a bit of time, and added a pinch of minced garlic to the mixture. This recipe is a keeper and it will be my go to recipe for meat loaf from now on. Bravo!

I've made this recipe before using a blend of 3 meats, beef, pork and veal, comes in a one pound pckg. To this, add another lb. of lean beef burger. I also added 2 beaten eggs to the mix and garlic. Excellent flavor, soft, moist texture- the best! Makes great sandwiches too!

Everybody cleaned their plates! The only thing I did differently was to check the temp at 40 minutes. It was 160 degrees, so I took it out then.

The only meatloaf I have ever made that doesn't fall apart when cutting! The steak sauce adds wonderful flavor. The only change I made was not mixing the breadcrumbs and milk separately. I added all ingredients together and mixed.

I don't even like meatloaf and I loved this one! My husband really likes meatloaf so I went on the hunt for a decent recipe. My husband won't eat green peppers and since I was in a hurry I used a package of dry beefy French onion soup mix and followed the rest of the recipe as is. To my surprise, I loved it and my husband won't eat meatloaf any other way. I did make it as written for a family reunion and all 8 meatloaves were gone in under an hour! Highly recommend. Thanks for posting this!
