Ingredients (For 2 servings)
- 1 teaspoon bacon grease
- 2 corn tortillas
- 2 slices Manchego cheese
- 6 zucchini blossoms
Directions
Step 1: Begin by melting the bacon grease in a cast-iron or regular skillet over medium heat.
Step 2: Once the grease is hot, place the tortillas side by side in the skillet.
Step 3: Place one slice of cheese on each tortilla, followed by 3 zucchini blossoms on top of each slice of cheese.
Step 4: Carefully fold the tortillas in half to form a taco shape.
Step 5: Cook for 2 to 3 minutes, until the tortillas are lightly browned and the cheese starts to melt.
Step 6: Flip the tacos and cook for an additional minute or until the other side is crispy and golden, and the cheese is fully melted.
Cook's Notes
Feel free to substitute the bacon grease with lard, oil, or butter, and you can replace Manchego cheese with mozzarella if preferred.
