Honey Apricot Pork Chops Recipe
Boneless Pork Chops with Honey Apricot Sauce
Servings: 4
Ingredients:
- 4 boneless pork chops
- Kosher salt and freshly cracked pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons honey
- 4 fresh apricots, pitted and cut into wedges
- 3 cloves garlic, minced (or to taste)
- 1 teaspoon chopped fresh parsley
Directions:
Step 1: Pat the pork chops dry with paper towels, then season both sides with salt and pepper.
Step 2: Heat the olive oil in a skillet over medium-high heat. Once hot, add the pork chops and cook for about 5 minutes per side, until browned and crispy.
Step 3: Stir in the honey, apricots, and minced garlic. Cover the skillet and let it simmer for around 8 minutes, until the pork is tender and cooked through. The internal temperature of the pork should reach at least 145F (63C) when measured with an instant-read thermometer.
Step 4: Once done, serve the pork chops with the apricots and pan juices on top. Garnish with freshly chopped parsley.

I'm usually not a fan of pork chops, but I must say these ones were delicious. I seasoned them with a generous amount of chili powder to give them an extra kick, which we love in our food. Since I didn't have fresh or canned apricots, I substituted with apricot preserves instead. I will certainly be making this dish again - it's so easy and quick!

I have prepared this dish twice now. The first time, I followed the recipe exactly as written. While I enjoyed the flavor, I found the pork chops to be quite dry after browning for 5 minutes on each side, and the honey quickly caramelized during simmering. For my second attempt, I used thin-sliced pork chops and only browned them for about 1.5 minutes on each side. Instead of just honey, I combined 1 cup of apricot preserves with the honey before adding it to the skillet. This enhanced the apricot flavor and prevented the honey from darkening. I also believe this method helped in keeping the pork chops moist. Towards the end, I added quartered fresh apricot wedges to the mixture for a brief period to warm them without overcooking. I served the pork chops and fresh apricots over rice, drizzling the delicious juices on top. I will definitely be making this dish again! **UPDATE: Tonight, I experimented with using peaches and peach preserves, as they were plentiful at the farm market. I believe they worked just as well as apricots! :)**

I didn't have fresh apricots, so I used canned ones instead. I drained them but saved the juice, adding a little at the end to create more liquid for the rice to absorb. I also sprinkled a bit of cayenne on one side of each chop for a spicy kick. The combination of sweet and spicy flavors over rice, served with asparagus, was fantastic. This recipe is definitely a keeper - it's simple, quick to prepare, and incredibly delicious. My family loved it!

I made a few changes to the recipe by using half a sweet red onion instead of garlic, sautéing it in olive oil before browning the meat. I also used sliced peaches instead of apricots since fresh apricots were not available. After cooking the meat, I reduced the sauce before serving. The dish turned out delicious and paired perfectly with green beans and brown rice. I can't wait to try it again with fresh apricots next summer. No additional honey was necessary.

The flavors were fantastic, but when I followed the instructions precisely, the pork turned out too overcooked for my liking. After reading a few reviews, I decided to use preserves instead of fresh fruit. On my second attempt, I seared the meat for around 4 minutes on each side. After searing the second side, I took the pork out of the pan and poured in the sauce, letting it simmer until it thickened slightly. Then I added the meat back into the pan and let it simmer for only about 5 minutes.
