I decided to make a smaller portion of this recipe since I only had 6 oz of fresh spinach on hand, and I substituted half & half for evaporated milk. I used a cold ceramic baking dish and my ingredients were also cold, which might be why the dish wasn't fully warmed through after 14 minutes - some of the cheese hadn't even melted.
