Cook Time: 15 minutes

Shrimp Tacos

Yield: 4 servings

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 clove garlic, finely chopped (or more to taste)
  • 1 (16 ounce) package frozen uncooked small shrimp, thawed, peeled, and deveined
  • 1 small bunch cilantro, chopped, divided
  • teaspoon seasoned salt
  • teaspoon chili powder
  • teaspoon ground cumin
  • Salt and ground black pepper, to taste
  • 4 (6-inch) corn tortillas (or more, to taste)

Directions

Step 1: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add garlic and cook until golden, about 2 minutes.

Step 2: Add the shrimp to the skillet along with 1/3 of the cilantro, seasoned salt, chili powder, cumin, salt, and pepper. Stir well and cook until the shrimp are opaque and the mixture is heated through, about 5 to 7 minutes.

Step 3: In a separate skillet, heat the remaining olive oil over medium heat. Add one corn tortilla at a time and cook until warm and slightly crispy, about 90 seconds per tortilla.

Step 4: Spoon the shrimp mixture onto the tortillas and garnish with the remaining cilantro. Serve immediately.
