Slow Cooker Chipotle Chili Recipe

Ingredients
- 2 pounds ground beef
- 1 pound bulk Italian sausage
- 1 large onion, diced
- 1 tablespoon minced garlic
- 2 (16 ounce) cans kidney beans, rinsed and drained
- 2 (16 ounce) cans chili beans, undrained
- 2 (14.5 ounce) cans diced tomatoes
- 2 (14.5 ounce) cans crushed tomatoes
- 2 ribs celery, chopped
- 1 green bell pepper, coarsely chopped
- red bell pepper, chopped
- (7 ounce) can chipotle chiles in adobo sauce, finely chopped
- (3 ounce) package bacon bits
- 1 tablespoon chili sauce
- 1 tablespoon hot pepper sauce (such as Frank's RedHot)
- 1 tablespoon chili powder
- 2 teaspoons brown sugar
- teaspoon ground cumin
- teaspoon salt
Directions
Step 1: Heat a large skillet over medium-high heat. Add the ground beef and Italian sausage to the hot skillet, stirring occasionally to render some of the fat, about 2 to 3 minutes.
Step 2: Add the diced onion and minced garlic to the skillet. Continue cooking and stirring until the meat is browned and crumbly, about 5 to 7 minutes. Once done, transfer the beef mixture to a slow cooker.
Step 3: To the slow cooker, add kidney beans, chili beans (with their liquid), diced tomatoes, crushed tomatoes, chopped celery, green and red bell peppers, chopped chipotle chiles, bacon bits, chili sauce, hot pepper sauce, chili powder, brown sugar, ground cumin, and salt.
Step 4: Stir all the ingredients together in the slow cooker. Set the cooker to low and cook for 6 to 8 hours, or on high for 3 to 4 hours, until the vegetables are tender and the celery retains a slight bite.

This was my first attempt at chili and it won first place in my office chili cook off!! (It won by a land slide, by the way.) I made a few highly recommended substitutions: pork chorizo instead of ground pork, a pound of bacon instead of the bacon bits, and fire roasted diced tomatoes. It was fantastic and I already have requests to make it again!!

Super yummy chili, I have made this recipe twice! The first time I made it, I followed the recipe. The second time I used black beans and garbanzo beans, since that is what I had. I also roasted a sheet pan of veggies in the oven, mishrooms, celery, carrots, peppers, zucchini, red and yellow onions, then added to the crock pot. Super yummy.

This recipe is fantastic!!! I made a few changes to it though. I opted to smoke the bulk sausage in mesquite wood, made for a nice 3rd layer of flavour. Also, used half the Chipotle pepper in Adobe sauce for my chili, but gave the option for people to add more. It was a big hit for those that didn't want fire tongue. Bravo for the recipe. Hands down best chili I have ever made!! Tons of flavor. I added the entire can of chipotle’s in adobo sauce. Makes enough for a crowd with leftovers that freeze beautifully for nights you don’t want to cook. I’ve made this at least 10 times and it’s consistently great.

I love this recipe. I've made it for football tailgate parties. I add extra celery, a seeded jalepeno, I crisp 1/2 lb of bacon instead of bacon bits. Everyone always LOVES it. I serve with Fritos, cilantro, green onion, cheese, sour cream, jalepeno slices and most recently made some corn bread. Huge hit.

Make the changes say in the comments. Bacon instead of bacon bits and chorizo. AWESOME. It could be a bit spicy for some this way. Definitely a go too recipe from now on. Would be awesome for a chili cook off. Better the next day even after being in the slow cooker all day.

I’ve made a lot of chili and this is certainly one of the best I’ve tried. Certainly the best slow cooker recipe. Like others, I changed a couple of things but basically stayed true to the recipe. I used a pound of real bacon rather than bacon bits, subbed chorizo for the Italian sausage, I doubled the cumin and I omitted the celery and green pepper and the hot sauce. It has good heat without the hot sauce and people can add it if they wish.

This chili has the perfect amount of smoky heat and chunkinrss. I couldn’t find chipotle peppers canned in my local store and had no time to search the Hispanic store so I used the chipotle chili powder I had and it worked just fine. I also used a lb of chorizo with a lb of beef for added spice. Topping with fresh tomato and plain yogurt today!

I use sriracha instead of chili sauce and hot sauce - by far my favorite chili recipe. Nearly overflows the full size crockpot. Made it on the stovetop in my Dutch oven last time and it turned out great.

I have been making this recipe for years now and I love it sooooo much. I use Mexican oregano, the taste is way better and due to allergies I skip the bell peppers. I am going to try adding a can of pineapple to my next make.

I used rotel diced tomatoes with green chilies instead and added 1/4 cup chili powder, and two fresh diced jalapeno chilies. Topped with shredded shard cheddar cheese. It was a big hit.
