Mexican Ground Beef Casserole Recipe

Ingredients

This recipe is designed for 6 servings. Ingredient amounts can be adjusted, but cooking times remain the same. Note that scaling may not always be perfect.

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 cups water
  • cup salted butter
  • 1 (6 ounce) package cornbread stuffing mix (e.g., Stove Top)
  • 1 (14.5 ounce) can diced tomatoes with jalapeno
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • teaspoon hot pepper sauce (e.g., Tabasco), or to taste
  • 1 (8.75 ounce) can sweet corn, drained
  • 1 cup shredded Cheddar cheese

Directions

  1. Preheat your oven to 375F (190C).
  2. Heat a large skillet over medium-high heat. Add the ground beef and chopped onion, cooking and stirring until the beef is browned and crumbly, about 5 to 7 minutes. Drain excess grease.
  3. While the beef cooks, prepare the cornbread stuffing. In a medium saucepan, bring the water and butter to a boil. Stir in the stuffing mix, cover, remove from heat, and let it sit for 5 minutes. Fluff with a fork.
  4. Add the diced tomatoes, chili powder, cumin, and hot sauce to the cooked beef mixture. Simmer for 2 minutes, stirring occasionally.
  5. Stir in the drained sweet corn and shredded Cheddar cheese. Continue simmering until the cheese melts completely, about 1 minute.
  6. Transfer the beef and cheese mixture into a casserole dish. Spread the prepared cornbread stuffing evenly over the top.
  7. Bake in the preheated oven for 20 to 30 minutes, or until the top is golden brown.

Cook's Notes

  • You can substitute shredded Mexican-style cheese for Cheddar for a different flavor.
  • For a lighter version, use ground turkey and low-fat cheese.
  • Follow package instructions for stuffing if using a brand other than the one mentioned.

Both my husband and I liked this dish, but we found it a bit too spicy for our liking. It was so simple to make that I will definitely try it again, but next time I'll use medium Rotel instead of hot.

I absolutely adored it. Very simple to prepare and incredibly tasty. The initial time I tried making it, I didn't have Corn Bread Stuffing mix on hand so I improvised with what was available. On my second attempt, I realized I was missing canned diced tomatoes with green chili peppers, so I omitted that ingredient. Instead, I opted for the cornbread stuffing this time around. Despite my concerns about it turning out dry, it was actually fantastic.
