Oyster Stuffing Recipe

This recipe serves 8 people and is a flavorful combination of fresh oysters, celery, and herbs. It's perfect for a festive occasion like Thanksgiving or any family gathering.

Ingredients

  • 1 cup butter
  • cup chopped onion
  • 12 cups fresh bread cubes
  • 1 pints fresh oysters, coarsely chopped, with liquor reserved
  • 1 cups chopped celery with leaves
  • 1 teaspoons salt
  • 1 teaspoon ground black pepper
  • teaspoon thyme leaves
  • teaspoon poultry seasoning

Directions

Step 1: Preheat your oven to 350F (175C) and grease a 9x13-inch baking pan.

Step 2: In a large Dutch oven or heavy pot, melt the butter over medium-high heat. Add the chopped onion and cook, stirring occasionally, until it becomes tender, about 5 minutes. Remove the pot from heat.

Step 3: To the onions, add the bread cubes, oysters (with reserved liquor), celery, salt, black pepper, thyme, and poultry seasoning. Stir everything together until well combined.

Step 4: Spoon the mixture into the prepared baking pan. Cover the pan tightly with aluminum foil.

Step 5: Place the pan in the preheated oven and bake for 40 minutes. After that, remove the foil and continue baking for an additional 20 minutes, or until the top is lightly browned.

Cook's Note

For best results, coarsely chop the oysters and reserve their liquor. A quick pulse in a blender can help achieve a good texture. If youre preparing this stuffing for Thanksgiving, you can bake it in the same oven as the turkey.

You have to try this recipe. When I heard of oyster stuffing I thought yuk. But one year I felt brave enough to try it since I was hearing how delicious it is. Well those voices were right. I wouldn't make stuffing now for my family without oysters or I'd be fired as their head cook! LOL The one thing this doesn't tell you is you get no fishy taste. Just a depth of flavor that is outstanding. Don't over do the oysters though. Follow the recipe strictly and you will be okay. If you are skeptical at all delete the oyster liquor and see how it goes. Just add a little chicken broth instead. I always stuff the bird which adds still another depth of flavor. And please do not pulse the oysters, just cut up in small chunks.

My mom always makes oyster dressing for Thanksgiving, but doesn't have a recipe to follow. She wasn't feeling well this year, so I tried it on my own following this recipe. Sorry, Mom! We are never going back! The chef's note recommends putting the oysters in the blender. This is what truly transforms this recipe because you get the oyster flavor in each bite. (Beware, putting oysters in a blender is one of the most disgusting things I've done in a long time...but it's worth it!).

The most surprising savory flavor. Oyster is the secret ingredient to make this dish shine! Also, I used a French loaf and it was perfect.
