This is a quick and easy and very delicious dinner to prepare. I used a packet of Costco boneless skinless chicken breasts and followed the recipe. The bread crumbs I used were the Progresso Italian bread crumbs. I did make my own herbes de Provence using a recipe from this site. Timing was perfect and dinner was delicious. This recipe is full of flavor, but needs a few things to reach full potential. First, salt and pepper the chicken breasts, then sprinkle the breasts with herbs de provence (or whatever herbs you use) before brushing on the mayo. (If you sprinkle on the herbs after coating in panko, they get lost.) Add 1 tsp of dijon mustard and 1/4 tsp or so of garlic powder to the mayo/parm mixture. Finally, if making this for a few people, it's much better to cook it on the stove. Add a tbsp of olive oil to a nonstick skillet. Heat for a couple of min on medium. Add the breasts, cook for about 4 min depending on thickness, then turn and cook 4 min more until panko is nice and golden. Serve with lemon wedges. You will like it!

Used chicken tender size pieces that were marinated all day in roasted garlic and Stubbs chicken dry rub seasoning. Dipped in mayo mix and bread crumbs as stated in the recipe. Baked at 350 degrees for about 30 minutes flipping chicken half-way through this time using our air fryer oven. Broiled for 2 minutes to crisp a little more. Turned out wonderfully moist, tender and delicious!

I've made this recipe a few times. I, personally, cannot stand mayo ... However, using mayo as the base is PERFECT - you would never guess I had used mayo - even I can't tell I used mayo once it's been cooked. I also combine it with panko bread crumbs ... it's now a family favorite. For extra flavor/breading taste, I'll slice up the chicken breasts into strips or medallions and then proceed as normal ... Left-overs? What left-overs.

Overall, simple and good! *Used the shaky parm as I didn’t have shredded *maybe my chicken breasts were big but only had enough breading mixture for the tops- next time I’ll double it and to be honest I did not have the herb/spice that was listed-nor did I know what it was exactly so I just used Italian seasoning added some garlic powder (garlic goes in everything!) and pepper. Also, because my chicken was big I put them in about 5 mins longer but after about 20 mins I took them out and basically basted them with the oil from the pan- Lastly, right after taking them out, I topped them with a little bit of shredded parm (someone brought me it after the fact haha).

Everyone loved this as is. The chicken was moist.even though I had to use large chicken tenders . I used Italian panko crumbs as they are light. It works well with store bought grated Parmesan as well as fresh grated. Serve with rice pilaf and peas...simple 30 minute meal.

Good recipe, simply and quick. One mistake, don’t use parchment paper. Put a little olive oil in bottom of baking dish to “crisp-up” bottom.

Have always loved this recipe, BUT breasts are dry by nature. Recommend slicing in half horizontally, then flatten with mallet, rolling pin or heavy frying pan.

I made this recipe with Italian seasoning instead of herbes de Provence. I used 3 Tbs of parmesan along with 3 of mayo and Italian seasoned bread crumbs. Everything else was as written, baked 20 minutes at 425. I did not add any additional salt or pepper to the chicken. The parmesan seems to add enough salt. I served this with a side of angel hair pasta and spaghetti sauce adding a side salad and garlic bread. My hope was for this chicken to turn out like an easy parmesan chicken and it did. My husband liked it and said it was moist on the inside and crunchy on the outside. He wants it as a repeat which is good enough for me.

This recipe is in regular rotation in my house. My picky 13yo loves this. I followed recommendation of others and added garlic powder and used Panko Plain. Couldn't find herbs de Provence so i use italian seasoning. This is easy and not too many ingredients. Thank you to whoever shared this keeper.
