Other times, its a personal request, or simply someone asking for my take on a new recipe idea. Thats how French Fries all'Assassina came about. - 3 tablespoons tomato paste
- 1/4 cup olive oil
- 3 cloves garlic, finely crushed or minced
- 1/2 teaspoon granulated garlic
- 1 1/2 teaspoons red pepper flakes
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon kosher salt
- 16 ounces frozen crinkle cut French fries
- 2 ounces Parmigiano-Reggiano cheese
- 1 teaspoon chopped fresh Italian parsley (optional)
Directions:
- Preheat your oven to 450F (230C) and line a baking sheet with parchment paper.

I made these last night. I didn't measure the amount of French fries, so I might have made more, but they turned out to be a hit. They were really savory and packed with flavor. Wow! I was really looking forward to trying these out! I usually enjoy Chef John's recipes, but this one didn't quite meet my expectations. Definitely give these a try! They are amazing and chances are you have everything you need in your kitchen already. If you have any leftovers, use them to make a delicious breakfast hash. I enjoyed mine with Mexican Crema, while my child opted for dipping them in sweet potato syrup. I'll be stocking up on potatoes for the next few days because I can't wait to make these again!

Chef John has been a great inspiration for me to try out numerous delicious recipes in the kitchen. However, this particular recipe fell short of expectations. Unfortunately, the fries ended up extremely burnt after just 30 minutes in the oven. The flavors were completely off, with the only sensation being that of overpowering heat from the pepper flakes and cayenne. Definitely not a savory experience.
