Ingredients
- 8 ounces fettuccine
- 1 tablespoon olive oil

Directions

- Once the sauce has thickened, add the grated Parmesan cheese. Stir continuously until the cheese has melted and the sauce becomes creamy and smooth. For a thinner sauce, you can add 1/4 to 1/2 cup of the reserved pasta water, adjusting to your desired consistency.

Perfectly simple and elegant! I loved the flavor profiles of this dish. Simple comfort food with an elegant twist of restaurant style pasta. The asparagus and mushrooms really shine through! With shallots, mushrooms and cream and parmesan, how could you go wrong? And it was almost guilt free eating until I served it with garlic cheese bread. The changes I made to this recipe were a chiffonade of basil and flat leaf parsley with a sprinkle of paprika just before serving. When I make this again, I will add more cream, and perhaps a protein too like chicken or ground turkey.

This recipe was really good. The sauce didn’t thicken and the Parmesan seemed to stick to the asparagus as it was incorporated into the recipe. Otherwise it was delicious and even better reheated when I took it to work the next day!
