If you cook the spring onions for 3 to 4 minutes, won't the garlic burn? Wouldn't it be better to do the garlic after the spring onions?

I would recommend NOT adding the garlic and ginger til the very last possible moment so that they do not get burned/over-cooked. It only takes about 30-40 seconds. Do the scallions first. Great dish!
