Directions

- In the same pot, melt 3 tablespoons butter over medium heat. Gradually whisk in the flour and cook, whisking constantly, until golden, about 1 minute. Gradually add the milk, salt, and cayenne pepper, whisking constantly until the mixture thickens, about 2 minutes.
- Gradually whisk in the shredded Cheddar cheese and 1 3/4 cups of Manchego cheese, adding 1 cup at a time, until the cheese melts and the sauce becomes smooth. Reduce the heat to medium-low and cook, stirring frequently, until the sauce thickens, about 3 minutes. Stir in the roasted garlic.
