There are countless variations of this classic dish, but this version, often made for special occasions, is both hearty and full of soul.
Ingredients
- 1 whole chicken, cut into pieces (drumsticks, thighs, halved breasts)
- 1 teaspoon Morton Natures Seasons seasoning blend
- 3 tablespoons butter
- 1 (32 ounce) carton low-sodium chicken broth
- 2 cups water
- 1/2 onion, minced
- 1 teaspoon poultry seasoning
- 1 teaspoon minced garlic
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 3 medium carrots, cut into 1-inch pieces (1 1/2 cups)
- 3 medium celery stalks, cut into 1-inch pieces (1 1/2 cups)
- 1 1/4 cups flour, plus extra for dusting
- 1 teaspoon baking powder
- 1 egg
- 1/2 cup whole buttermilk, well shaken
- 1/2 cup butter, chilled and cut into thin slices
- Chopped fresh parsley, for garnish
Directions
- Generously season the chicken pieces with Mortons seasoning blend.
- In a large Dutch oven, melt 3 tablespoons butter over medium-high heat. Place chicken pieces skin-side down and cook until golden brown, 6-8 minutes. Flip and brown the other side for another 6-8 minutes.
- Add the chicken broth and water, bringing the mixture to a boil over high heat. Stir in minced onion, poultry seasoning, garlic, 1 teaspoon salt, and black pepper. Reduce heat, cover, and simmer for 20 minutes.
- Add carrots and celery, leaving the pot partially covered, and continue simmering over low heat until vegetables are nearly tender, about 20 minutes.
- Meanwhile, sift flour, baking powder, and remaining 1/2 teaspoon salt into a large bowl. In another bowl, whisk together the egg and buttermilk. Cut chilled butter into the dry ingredients using a pastry cutter or two forks until crumbly. Stir in the buttermilk mixture gently until just combined. Cover with plastic wrap and refrigerate for 30 minutes.
- Turn dough onto a floured surface. Pat to about 1-inch thickness, folding the edges toward the center gently. Repeat folding until the dough comes together, then pat again to 1-inch thickness.
- Remove cooked chicken from the Dutch oven and place on a plate, covering with foil to keep warm. Skim fat from the broth and bring it to a gentle boil over medium-high heat.
- Cut the dough into nine 2x2-inch squares. Drop each square one at a time into the boiling broth. Lower heat to medium and simmer uncovered until all dumplings rise and a toothpick inserted into the center comes out clean, about 10 minutes.
- Return the chicken to the pot and simmer for an additional 5 minutes. Serve chicken and dumplings in bowls, garnished with fresh parsley.

The Rich Heritage of Rustic Chicken and Dumplin's
Rustic Chicken and Dumplin's is a classic American comfort dish with deep roots in Southern culinary traditions. Originating in rural Southern kitchens, this hearty meal was a staple for families seeking warmth and nourishment during colder months. The dish embodies simplicity, relying on basic, readily available ingredients like chicken, flour, butter, and root vegetables, yet transforming them into a rich, savory experience that has been cherished across generations.
Regional Nuances
While this dish can be found throughout the United States, its most authentic expressions come from the Appalachian region and Southern states. In Appalachia, cooks often leave the chicken on the bone, simmering it slowly to enhance flavor and create a deeply satisfying broth. Some variations incorporate locally grown vegetables such as turnips or parsnips in addition to carrots and celery. In contrast, Southern versions might include a touch of cream or milk to enrich the dumplings, creating a slightly lighter texture compared to the denser, rustic dumplings found in the heartland.
Distinguishing Features from Similar Dishes
Although it shares similarities with chicken stew or pot pie, Rustic Chicken and Dumplin's stands out due to its unique dumplings and the retention of chicken bones, which contribute to a more robust, flavorful broth. Unlike standard chicken soup where noodles are common, dumplings provide a tender, buttery complement that absorbs the essence of the chicken and seasonings. Additionally, the folding method used in the dough ensures a delicate, flaky texture not found in simpler drop dumplings.
Where Its Commonly Served
Traditionally, Rustic Chicken and Dumplin's is a family-centric dish served at home during Sunday dinners, holidays, or special occasions like birthdays. Its comforting nature makes it a frequent feature in home-cooked Southern meals, local diners, and seasonal community gatherings. The dish is often plated in deep bowls, with the chicken, vegetables, and dumplings bathed in golden broth, accompanied by a sprinkling of fresh parsley for a vibrant touch.
Interesting Tidbits
One charming fact about this recipe is its connection to Dolly Parton, the renowned entertainer. Her sister, Rachel Parton George, has been preparing this dish annually for Dollys birthday, showcasing the recipes status as a cherished family tradition. Another interesting aspect is the versatility of the dumplingswhile the original recipe calls for a simple flour and butter mixture, variations may incorporate herbs, cheese, or even cornmeal to add regional flair. Moreover, leaving the chicken bones intact not only intensifies flavor but also pays homage to traditional Southern cooking techniques, emphasizing authenticity and a connection to the land.

I didn't have stalk of celery so I used celery seeds and a can of cream of celery soup the first time it was delicious

The chicken and broth had absolutely wonderful flavor but the dumplings didn’t do it for me. I would use this base and add Grandma’s noodles next time instead.
