- very ripe banana, mashed
- 1 large egg, lightly beaten
- 2 tablespoons butter, melted
- teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- teaspoon salt
Directions
Follow these steps to create a delicious batch of cookies:
- Preheat your oven to 350F (175C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the chopped dates, pecans, water, mashed banana, beaten egg, melted butter, and vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt.
- Slowly add the dry ingredients to the wet mixture, stirring until everything is fully combined.
- Using a tablespoon, scoop dough onto the prepared baking sheet, placing each scoop about 1 inch apart. Lightly flatten each scoop with the palm of your hand.
- Bake in the preheated oven for 11 to 13 minutes, or until the edges of the cookies begin to brown. Be careful not to over-bake.
- Once baked, immediately transfer the cookies to a wire rack to cool.
