Boozy Irish Whiskey Cake Recipe

Irish Whiskey Mini Loafs

Ingredients

  • 1 (15.25 ounce) package yellow cake mix
  • 2 (3.9 ounce) packages instant vanilla pudding mix
  • 1 cup chopped walnuts, divided
  • 1 cup Irish whiskey, divided
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 teaspoon water

Directions

Step 1: Preheat the oven to 325F (165C). Grease six mini loaf pans with cooking spray.

Step 2: In a large bowl, combine the cake mix, pudding mix, and 1/2 cup of walnuts.

Step 3: In a separate bowl, whisk together 1/2 cup of Irish whiskey, milk, and vegetable oil. Then, whisk in the eggs until fully incorporated.

Step 4: Pour the wet ingredients over the cake mixture and stir until well-blended.

Step 5: Divide the batter evenly among the prepared loaf pans.

Step 6: Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool for 5 minutes.

Step 7: While the loaves are cooling, melt the butter in a small saucepan over medium heat. Whisk in the brown sugar and cook for about 2 minutes until smooth.

Step 8: Add the remaining 1/2 cup of walnuts, 1 tablespoon of the remaining Irish whiskey, and the water. Continue cooking over medium heat, whisking constantly, until the mixture becomes smooth, about 3-5 minutes.

Step 9: Remove the saucepan from heat and whisk in the remaining Irish whiskey.

Step 10: Remove the cakes from the pans and invert them onto a wire rack placed over a baking sheet. Use a toothpick to poke small holes across the tops of each loaf.

Step 11: Pour the whiskey topping over the cakes, allowing it to soak in as they cool.
