Blackberry Clafoutis

Ingredients

  • 1 teaspoon butter (or as needed for greasing)
  • 1 (6 ounce) fresh blackberries (or more to taste)
  • cup milk
  • 2 large eggs
  • cup all-purpose flour
  • 7 tablespoons white sugar
  • 1 pinch salt
  • 1 tablespoon brown sugar (or more to taste)

Directions

  1. Preheat your oven to 375F (190C). Grease a 9-inch baking dish with butter.
  2. Place the fresh blackberries in the prepared baking dish, spreading them out evenly.
  3. In a separate bowl, whisk together the milk and eggs until well combined.
  4. Add the flour, sugar, and salt to the egg mixture, whisking until the batter is smooth and lump-free.
  5. Carefully pour the batter over the blackberries in the baking dish.
  6. Bake in the preheated oven for about 25 minutes, or until the batter is set and the eggs begin to firm up.
  7. Sprinkle the brown sugar over the top of the clafoutis and continue baking for an additional 20 minutes, or until the top is golden brown.
