This delightful recipe transforms grapefruit peels into a sweet treat with just a few simple steps. Whether youre using white or pink grapefruit, the end result is a delicious, tangy candy thats sure to impress!

Ingredients

  • 4 medium grapefruits
  • 2 cups white sugar, divided

Directions

  1. Start by quartering the grapefruits and carefully removing the rinds. Set the interior fruit aside for another use, like making fresh juice or adding to a fruit salad.
  2. Slice the rind lengthwise into strips, about 1/4 inch wide at the thickest part. Youll want to create nice, even pieces for uniform cooking.
  3. Fill a heavy saucepan with water, covering the grapefruit rind by about 2 inches. Bring the water to a boil, then boil the rind for 3 minutes. Drain the water, and repeat this process three more times using fresh water each time. After the final boil, drain the rinds well.
  4. Once the rind has been boiled, place it back into the saucepan. Add 1 cups of sugar and 1 cup of fresh water. Stir gently and bring the mixture to a simmer. Let it cook slowly over medium-low heat, stirring occasionally. Gradually increase the heat as needed until most of the water has evaporated or been absorbed. This process will take about 1 hour.
  5. Once the rinds have absorbed the syrup, remove the pan from the heat. Pour the remaining 1 cup of sugar into a large bowl. Carefully toss the simmered grapefruit rind in the sugar, making sure each piece is well coated.
  6. Transfer the sugared rind pieces onto wax paper or a wire rack to cool and dry. If you like your candies extra sweet, feel free to dust them with a little more sugar before they completely dry.
  7. Allow the candied rinds to cool completely before serving. They will have a perfect, chewy texture and a bright, citrusy sweetness.

Cook's Note

You can use either white or pink grapefruit for this recipe. Ive found that thinner rinds tend to work best, as thicker rinds can remain a bit too moist. Experiment with both to see which texture you prefer!
